Ingredients

  • 12 ounce can apple raspberry juice concentrate, thawed
  • 1 1/2 cups water
  • 1/4 cup tapioca granules
  • 4 - 5 cups raspberries, fresh or frozen

Instructions

    1: In a saucepan, mix together the juice concentrate, water and tapioca granules. Let sit for 15 minutes.
    2: Next bring the mixture to a boil.
    3: Once it comes to a boil, reduce the heat to a simmer. Stir constantly until the tapioca is clear.
    4: Stir in the raspberries. Once the raspberries are heated through and the mixture has thickened, remove it from the heat. It will continue to thicken as it cools.
    5: Store in the refrigerator.

Notes

You can also use raspberry juice concentrate. Use juice concentrates with no sugar added.

No-bake Cinnamon Pecan Pie Crust

No-bake Cinnamon Pecan Pie Crust

Ingredients

  • 1½ cup pecans, raw
  • 3 tablespoons coconut or date sugar
  • ½ teaspoon Kosher salt
  • 1½ teaspoons cinnamon
  • 1 tablespoon coconut oil

Instructions

    1: Combine the pecans, sugar, salt and cinnamon in a food processor. Process until the mixture is just blended.
    2: Add the coconut oil and process until the mixture is finely minced like a graham cracker crust.
    3: Transfer the mixture into a 9 inch pie pan or fluted tart pan.
    4: Press the mixture into the pans up the sides first. Then fill in the middle. Once the mixture is evenly distributed press the a bit more until the curst is even and firm.
    5: The crust is ready to be filled with a no-bake pie, tart or torte filling.

Notes

You can use another type of salt if you do not have Kosher salt.
This crust is delicious with a no-bake pie or ganache filling.

Crockpot Lentil Taco Filling

Ingredients

  • 5 cups water
  • 2 cups lentils, dried
  • 3 cups onion, diced
  • 3 - 4 tablespoons taco seasoning mix, homemade
  • 1 - 2 tablespoons garlic, minced
  • Salt (to taste)
  • Cooking spray

Instructions

    1: Spray crockpot or slow cooker with cooking spray.
    2: Stir in the rest of the ingredients.
    3: Cook on high 2 1/2 - 3 hours or until the lentils are as soft as you like them. Add salt to taste. Serve.

Notes

You can use 1 package (about 2.5 ounces) of store-bought packaged taco seasoning in place of the homemade .
This Lentil Taco Filling is delicious in tacos, burritos, with chips and on taco salads.

Baked Egg Tostada

Baked Egg Tostada

Ingredients

  • 2 corn or small whole wheat tortillas
  • Cooking Spray
  • 1/3 cup black Beans (rinsed and drained) or refried beans
  • 1/3 cup cheese, shredded (Monterey Jack, cheddar or mozzarella)
  • 2 eggs
  • Salt (to taste)
  • Pepper (to taste)

Instructions

    1: Preheat toaster oven to 375 degrees.
    2: Spray both sides of the tortilla with cooking spray.
    3: Place tortilla on toaster oven baking sheet. Bake 4 - 5 minutes.
    4: Keep the toaster oven on and remove the tortilla.
    5: Arrange the beans in a circle around the inside edge of each tortilla (like a wreath). Sprinkle cheese over the beans.
    6: Crack an egg in the center of the tortilla. The beans should contain the egg. Repeat with the other tortilla.
    7: Return the tortillas to the toaster oven. Bake 12 to 15 minutes or until the eggs are set and the yolks are cooked as desired.
    8: Transfer the tostadas to a plate and top with salt, pepper and any toppings you like.

Notes

Optional toppings: salsa, sour cream, guacamole, sliced olives, diced tomatoes, diced avocados, diced onions and more.

You can also make this recipe in the oven. Prepare as many Baked Egg Tostadas as you like on a baking sheet.

Line your baking sheet with foil for easier clean up.
