Baked Sweet Potatoes

Do you love Sweet Potatoes? Did you know this Super-healthy vegetable is also super-easy to bake? In this cooking video Karen Breyer and her dad will show you step-by-step how to make Baked Sweet Potatoes. This recipe is so easy that any beginner cook can make them.

Sweet potatoes are healthy and a perfect side dish or main dish for many occasions. This is a perfect recipe to keep everyone happy as they can put custom toppings on top of their potato. Try topping baked sweet potatoes with chili and sour cream for a hearty, healthy meal. The possibilities are endless! Watch this cooking video and serve some Baked Sweet Potatoes for dinner tonight!

Yield: 6 servings

Baked Sweet Potatoes

Ingredients

  • 6 sweet potatoes (or as desired)

Instructions

  1. Preheat oven to 425 degrees.
  2. Wash and dry your sweet potatoes.
  3. With a fork, poke holes all over the sweet potatoes so the steam can escape when they are cooking.
  4. Place the sweet potatoes on a foil-lined baking sheet and cook 45 - 60 minutes or until the potato is soft all the way through. You can test this with a knife. (Smaller potatoes will cook faster and larger ones will take longer)
  5. Make a slit in the top of the sweet potatoes and serve. Add toppings of your choice.

Notes

You can also use this recipe to bake yams.

Test the doneness by poking a knife in the largest part of the yam. When they are soft and tender they are done.

Adjust the number of sweet potatoes to how many you need.

The foil will make clean up much easier because the potatoes will ooze as they cook.

Top with butter, salt, pepper, sour cream, chili, beans and more.

Instant Pot Hard Boiled Eggs

Looking for an easier way to make Hard Boiled Eggs? Here it is! Make your next batch of Hard Boiled Eggs in an Instant Pot! It is so easy and no waiting for a pot of water to boil. Just put the eggs in your Instant Pot with 1 cup of water and turn it on! The eggs will be cooked quickly and are so easy to peel!

Instant Pot Hard Boiled Eggs

Ingredients

  • 6 eggs
  • 1 cup water

Instructions

  1. Place the steam rack on the bottom of the Instant Pot. Add 1 cup water.
  2. Place the eggs on the steam rack.
  3. Close and lock the lid. Set the valve to the sealing position.
  4. Press the Manual button.
  5. Press the + or - and set the time for 5-8 minutes. Cook larger eggs longer and smaller eggs fewer minutes. You can also adjust the time depending on how hard or soft you like your eggs. For softer eggs cook less, for harder eggs cook longer.
  6. When the cooking cycle ends, wait 5 minutes and then turn the steam release button to the venting position. Let the steam out until the float valve drops down.
  7. Press the keep warm/cancel button. When the LED displays OFF and the float valve is down you can open the lid.
  8. Remove the eggs and place them in a bowl of ice water. Cool the eggs at least 5 minutes.
  9. Serve the hard boiled eggs warm or refrigerate them and serve them cold later. Peel the eggs just before serving.

Notes

Make sure to keep your hands and face away from the steam release openings.

Unpeeled hard boiled eggs will keep a week in the refrigerator.

You can also cool the eggs by running them under cold water until they are cool.

Lemon Pepper Chicken Wings

Yield: 3 - 4 servings

Lemon Pepper Chicken Wings

Ingredients

  • 6 - 8 chicken wings
  • 1 - 2 teaspoons melted butter
  • Lemon pepper (to taste)
  • Salt (to taste)

Instructions

  1. Preheat the oven to 350 degrees.
  2. Melt the butter in a small saucepan over low heat or microwave for about 30 seconds (or until it is melted).
  3. Place the chicken wings in a baking pan.
  4. Brush the wings with melted butter.
  5. Sprinkle the chicken wings with lemon pepper and salt.
  6. Bake at 350 degrees for 35 to 45 minutes or until chicken is cooked through.

Notes

Check to see if the chicken is done by cutting into a thick pieces of the chicken and make sure the juices run clear. The internal temperature of the chicken should be at least 165 degrees. If the juices are red or pink cook the chicken longer.

You can adjust the recipe to make more or less Lemon Pepper Chicken Wings.

Yield: about 1 cup

Basil Pesto

Ingredients

  • 1/2 cup pine nuts or walnuts, toasted
  • 2 cups fresh basil
  • 2 teaspoons minced garlic
  • 1/3 cup olive oil
  • 1/4 - 1/2 cup Parmesan cheese
  • 1/2 teaspoon Kosher salt (or to taste)
  • 1/8 teaspoon fresh ground pepper (or to taste)

Instructions

  1. Add the nuts and basil to a food processor or blender. Pulse the ingredients together until mixed.
  2. Add the rest of the ingredients and blend to a smooth paste.
  3. Store in the refrigerator until ready to use. Toss Basil Pesto with pasta, spread it on a sandwich, crackers or toast, dollop over potatoes, or spread it on a pizza crust and make pizza!

Notes

You can use 4 garlic cloves in place of the minced garlic or to your taste.

Store this Basil Pesto in the refrigerator until you are ready to use it. Freeze for up to 3 months.
