No-bake Almond Coconut Pie Crust

Try this delicious, easy, healthy No-bake Almond Coconut Pie Crust! In this video Karen Breyer will show you step-by-step how to make this easy, no-bake pie crust recipe. This No-bake Almond Coconut Pie Crust recipe has only a few ingredients. Besides being very yummy it is healthy too! I think you will be very surprised how easy it is to make this pie crust. You can make it in minutes and everyone I know who has tried it loves it!

This pie crust can be paired with any no-bake pie filling. I often use this No-bake Almond Coconut Pie Crust with my favorite easy, healthy Raspberry Pie and Lemons Custard Pies. This pie crust is so easy to make that it is my husbands number one (and only) pie crust he likes to make with his favorite Raspberry Pie. He is not a cook and if he can make it, you can make it too! Yield: 8 servings

No-bake Almond Coconut Pie Crust

Ingredients

  • 1 cup almonds, ground
  • 3/4 cup unsweetened coconut
  • 2 tablespoons water
  • 2 - 3 tablespoons maple syrup (divided)
  • 1 tablespoon lemon zest
  • 1/4 - 1/2 teaspoon salt (optional)

Instructions

  1. Mix coconut with 2 tablespoons water and 1 tablespoon maple syrup and let set a few minutes.
  2. Mix the other ingredients in a bowl.
  3. Combine the coconut mixture with the rest of the ingredients (and the rest of the maple syrup). Add a little water if the mixture is dry.
  4. Press into pie pan.
  5. (Carefully pour in no-bake pie filling of your choice.)
  6. (Put pie in the refrigerator until it is set.)

Notes

May use pecans instead of almonds.

May use fresh or dried shredded coconut. If using dried, you may want to add a little water to moisten the dough.

I found ground almonds at the store or you can grind almonds in the blender or food processor.

Add salt if desired. I actually like it best with a little salt. Try it both ways and see what you like.

Do not oil the pie pan.

Sweet Potato Toast

Try this delicious, healthy Sweet Potato Toast! It is so easy to make in your toaster or toaster oven! All you need is sweet potatoes! In this video Karen Breyer will show you step-by-step how to make this Sweet Potato Toast recipe.

This is the easiest recipe you may ever make! Top your Sweet Potato Toast with different spreads and toppings. It is a perfect recipe for when you are in a hurry or do not want to make a complicated recipe. You can serve this Sweet Potato Toast for breakfast, lunch, or dinner. It is also perfect for an easy snack or appetizer.

Enjoy many different toppings on your Sweet Potato Toast. You can set out different toppings for your family or guests to choose from and everyone will be satisfied! Watch this Sweet Potato Toast cooking video and make some Sweet Potato Toast today!

Yield: 1 serving

Sweet Potato Toast

Ingredients

  • 1 medium to large sweet potato
  • Your choice of toppings (see below)

Instructions

  1. Wash and dry a sweet potato.
  2. Slice the sweet potato lengthwise into slices about 1/4 inch thick. For smaller slices cut the potato in half before making lengthwise slices.
  3. Place the potato slices on the toaster oven rack or in the toaster (make sure they are long enough to get out!).
  4. Press toaster as many times it takes to make your sweet potato slices browned as much as you like. Some slices may toast faster than others so just take them out early if they do.
  5. When your sweet potato slices are toasted, spread them with the toppings of your choice and enjoy!

Notes

Some delicious toppings for this Sweet Potato Toast include butter, almond or peanut butter with fruit, hummus, tofu sour cream and chives, eggs, maple syrup, avocados, cream cheese and strawberries, chili, lentils, bruschetta and Parmesan, plus so many more possibilities!

Some of the browned spots may turn almost black and that is fine in my opinion.

You can toast the skin ends of the sweet potatoes too but they may take longer or shorter to cook.

Serve this Sweet Potato Toast for breakfast, lunch, dinner and even as an appetizer or snack!

Tomato Basil Bruschetta

Make this easy, healthy Tomato Basil Bruschetta recipe! In this cooking video Karen Breyer will show you step-by-step how to make Tomato Basil Bruschetta. It is so delicious and good for you too!

Serve this Tomato Basil Bruschetta on toast, grilled bread, fresh bread or crackers. Choose whole grain bread and you have a very healthy snack or appetizer! Bruschetta and bread would be wonderful with any meal and especially good with an Italian dish. I served my leftover bruschetta on my salad and that was delicious too! Yield: 8 servings

Tomato Basil Bruschetta

Ingredients

  • 3 cups Roma tomatoes, diced
  • 1 cup red onion, diced
  • 1 tablespoon garlic, minced
  • 1/4 cup basil, fresh (chopped) OR 1 tablespoon basil, dried
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1/4 teaspoon (or to taste) salt, Kosher
  • 1/4 teaspoon (or to taste) pepper, fresh ground
  • 1/4 cup (or as desired) Parmesan cheese, grated

Instructions

  1. In a large bowl, combine all the ingredients except the Parmesan cheese. Taste and add more salt if needed.
  2. Chill about 1 hour for flavors to blend.
  3. Spoon on top of toast, grilled toast, bread or crackers. Then top with Parmesan cheese.

Notes

Cold pressed extra virgin olive oil is recommended but you can use any variety of olive oil.

I put the leftover Tomato Basil Bruschetta on my salad and it was delicious!

Toasted Almonds

Learn how to Toast Sliced, Slivered and Whole Almonds in the oven. It is so easy! In this video Karen Breyer will show you step-by-step how to make Toasted Almonds in the oven. There are not many steps so even beginners can make Toasted Almonds!

Toasted Almonds are delicious and healthy! Eat them by themselves and add them to your favorite recipes! I like to toast my almonds before adding them to my homemade trail mix. Slivered and sliced almonds are especially delicious on salads, yogurt, and cereal. It is so easy to Toast Almonds in the oven! All you need is a baking sheet. Watch this cooking video and Toast some Almonds today!

Toasted Almonds

Ingredients

  • Almonds, raw (whole, sliced or slivered)

Instructions

  1. Preheat oven to 350 degrees.
  2. Spread nuts in a single layer on an ungreased baking sheet or shallow pan.
  3. Toast the nuts in the oven until they are light brown and have a nutty aroma. Stir a couple of times during cooking. See below for cooking times.
  4. Cool and serve.

Notes

Approximate cooking times:
Whole almonds: 10 -15 minutes
Sliced almonds: 5 - 10 minutes
Slivered almonds: 5 - 10 minutes

Larger and denser nuts will take longer and smaller nuts will cook faster.

Do not combine different types of nuts on a baking sheet because of the various cooking times.
