Toaster Oven French Toast

Toaster Oven French Toast

Ingredients

  • 2 eggs
  • 1 cup soy or regular milk
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla (optional)
  • 1/8 teaspoon salt
  • 4 slices bread, whole grain
  • Cooking spray

Instructions

    1 : Spray a baking pan that fits in your toaster oven with cooking spray.
    2: Whisk together the eggs, milk, honey, vanilla and salt in a shallow bowl.
    3: Soak each slice of bread in the egg mixture until saturated. Turn it over and soak the other side.
    4: After the slice of bread is soaked, place it on the pan. Repeat with another slice of bread.
    5: Move toaster oven rack to the broil setting.
    6: Broil 5 - 8 minutes on the first side. Then turn the bread over and broil 5 - 8 minutes more until the French Toast is golden brown.
    7: Serve hot with desired toppings

Notes

I prefer Kosher salt.
For easy clean up, line pan with foil then spray with cooking spray.

Corn Muffins

Ingredients

  • 1 cup cornmeal, yellow
  • 1 cup white whole wheat flour (lightly packed)
  • 2 tablespoons flax meal
  • 4 teaspoons baking powder
  • 1 teaspoon Kosher salt
  • 1 13.5 ounce can coconut milk, unsweetened
  • 3 - 4 tablespoons honey
  • Cooking spray

Instructions

    1: Preheat oven to 350 degrees. Spray a muffin pan with cooking spray.
    2: In a large bowl, mix together the cornmeal, white whole wheat flour, flax meal, baking powder and salt.
    3: In another bowl whisk together the coconut milk and honey.
    4: Add the wet ingredients to the dry ingredients. Stir together until all the ingredients are moistened. Do not over mix.
    5: Fill the muffin cups with the batter.
    6: Bake for 30 minutes or until golden brown.
    7: Allow the muffins to cool about 5 minutes before taking them out of the pan. Transfer to a wire rack to continue to cool
    8: Serve warm. They are delicious plain and also with butter and honey.

Notes

Flax meal is ground flaxseeds.

You can use another type of salt if you don’t have Kosher salt.

To make measuring easier, if you are going to use 4 tablespoons of honey that equals 1/4 cup.

For bigger muffins, fill 9 of the muffin cups instead of 12.

Cranberry Walnut Scones

Ingredients

  • 2 cups white whole wheat flour (lightly packed)
  • 1 tablespoon baking powder
  • 1/2 teaspoon Kosher salt
  • 1/4 cup coconut or date sugar
  • 2 tablespoons flax meal
  • 1/3 cup walnuts, chopped
  • 1/3 cup cranberries, dried
  • 2/3 cup soy milk
  • 1/3 cup grape seed or canola oil
  • 1 teaspoon vanilla
  • Cooking spray

Instructions

    1: Preheat oven to 400 degrees. Spray a baking sheet with cooking spray.
    2: Combine the flour, baking powder, salt, sugar, flax meal, walnuts, and dried cranberries in a mixing bowl.
    3: In a separate bowl, whisk together the soy milk, oil and vanilla.
    4: Using a fork, mix the liquid mixture into the dry mixture.
    5: Once the dry ingredients are completely mixed in, form a ball.
    6: Gently flatten the dough into a 7 inch circle on the baking sheet.
    7: Using a knife, score the dough into 8 wedges. Do not separate the wedges.
    8: Bake 20 - 22 minutes or until golden brown.
    9: Serve warm.

Notes

You can use any granulated sugar in place of the coconut or date sugar.
I recommend using organic flour and aluminum free baking powder when you can.
Flax meal is the same as ground or milled flaxseed.
You can use whole wheat flour or whole wheat pastry in place of the white whole wheat flour. If you use these flours the scones will be a bit denser and not as sweet.

Yield: 8 servings

French Bread Pizza

Ingredients

  • French bread loaf, whole wheat
  • 2 1/2 cups pizza or pasta sauce
  • 2 cups mozzarella cheese
  • Choice of toppings:
  • Onion, chopped
  • Bell peppers, chopped
  • Mushrooms, sliced
  • Tomatoes, sliced
  • Pineapple tidbits
  • Olives, pitted and sliced
  • Zucchini, thinly sliced
  • Garlic, thinly sliced raw or roasted
  • Herbs, fresh (oregano, basil)
  • Crushed red pepper flakes
  • Veggie or regular meats (cooked)
  • Cheese, shredded (variety)
  • Parmesan cheese
  • And more!

Instructions

  1. Preheat oven to 400 degrees. Line baking sheet with foil.
  2. Slice loaf of bread lengthwise in half. Place cut side up on a baking sheet.
  3. Spread the sauce evenly over the bread, leaving about 1/2 inch border without sauce.
  4. Sprinkle cheese over sauce.
  5. Layer and arrange your choice of toppings over the cheese. Place the large items first and then the smaller ones.
  6. Bake about 10 - 14 minutes or until cheese is melted and bubbly (vegan cheese won’t get bubbly).
  7. Allow to cool a bit. Cut and serve.

Notes

Use more or less sauce and toppings as desired. Your pizza will be as healthy as your toppings are.

Adjust the ingredients to your taste.

For extra crispy bread, lightly toast the bread for about 5 minutes. Then top and cook as directed.

You can also cook this pizza in a toaster oven at 400 degrees. Cut the French bread in half and then lengthwise in half. You will have 4 pieces of bread instead of 2. Top bread with sauce, cheese and toppings. Bake on a foil lined toaster oven baking sheet or place directly on rack. Bake one or two at a time as you have room in the oven.
