Yield: About 8 cups

Whole Wheat Pancake and Muffin Mix

Ingredients

  • 1 cup walnuts
  • 6 cups whole wheat flour
  • 1/3 cup cornstarch
  • 1/4 cup baking powder
  • 1/3 cup date or coconut sugar
  • 1 tablespoon Kosher salt

Instructions

  1. Place 1 cup of walnuts and 1 cup of flour in a food processor. Process until the nuts are fine like the flour. (Repeat this step if you are doubling this recipe)
  2. Pour nut and flour mixture into a large mixing bowl.
  3. Add the rest of the flour, cornstarch, baking powder, sugar, salt into the bowl. Mix all the ingredients together.
  4. The mix is ready to use. Store unused mix in a freezer bag or plastic container in the freezer until ready to use.

Notes

I use non-GMO cornstarch.

I recommend using baking powder without aluminum.

You can double this mix if you like. You will need a very large mixing bowl that can hold more than 12 cups.

Oat Flour

Ingredients

  • 2 cups old fashioned oats (or amount desired)

Instructions

  1. Add the oats to a blender or food processor.
  2. Blend the oats. Turn the blender off as soon as the oats turn to flour. Do not over blend the oats.
  3. Use the flour as needed in your recipes.

Notes

Adjust the recipe to make as much oat flour as you need.

Yield: 1 loaf

Healthy Banana Bread

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup flour, unbleached
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1/2 cup walnuts, chopped
  • 1/2 - 3/4 cup bananas, ripe (mashed)
  • 1/2 cup coconut milk
  • 1/3 cup honey
  • Water (as needed)
  • Cooking spray

Instructions

  1. Preheat oven to 350 degrees. Spray loaf pan with cooking spray.
  2. Mix dry ingredients together. Mix in walnuts.
  3. Mix mashed bananas, coconut milk, and honey together.
  4. Add enough water to make 1 1/2 cup total liquid and mix together.
  5. Briskly stir the liquid mixture into the dry ingredients.
  6. Pour mixture into pan and bake 40 to 45 minutes or until the bread is golden brown and a knife inserted in the center comes out clean.

Notes

I like Kosher salt the best.

I prefer aluminum-free baking powder.

French Toast

French Toast

Ingredients

  • 4 eggs
  • 3/4 cup milk, soy milk, or almond milk
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt
  • 8 slices bread
  • Cooking Spray
  • Your Choice of Toppings
  • Peanut or almond butter
  • Fruit sauce
  • Apple sauce
  • Butter or margarine
  • Syrup
  • Jam

Instructions

  1. Whisk together eggs, milk, cinnamon, vanilla, and salt until smooth.
  2. Spray griddle or skillet with cooking spray. Heat griddle or skillet over medium heat (about 375 degrees).
  3. When it is hot, water drops will jump around.
  4. Dip bread in the egg mixture, turning to coat both sides.
  5. Place dipped bread on griddle or skillet. Cook about 4 minutes on each side or until golden brown.
  6. Top with your choice of toppings.

Notes

If using a griddle, heat it to 375 degrees or medium heat for about 10 minutes before cooking the French toast. This will help to keep the griddle more evenly heated and you will have more even browning.

To see if the griddle or skillet is hot enough, drop a few drops of water on the pan. It the water jumps around, it is hot enough.

Use whisk or fork to whisk together egg mixture.

Serve French toast right away or keep them warm in a single layer on a pan in a 200 degree oven. If you stack the French toast, the steam may make them soggy.

You can try different types of bread. The thicker breads will take longer to cook. If you use French bread, soak about 30 seconds on each side.

Use slightly stale bread when you can.
