Southwestern Bean Chili

This is a wonderful, hearty chili recipe using three different types of beans. The garbanzo beans, black beans, and red beans are canned so that makes it a very easy and convenient recipe.

You can put the ingredients in the crockpot or slow cooker in the morning and it will be ready for you at dinner time! Yield: 8 servings

Southwestern Bean Chili

Ingredients

  • 1 - 6 ounce can tomato paste
  • 1 - 15 ounce can garbanzo beans, drained and rinsed
  • 1 - 15 ounce can black beans, drained and rinsed
  • 1 - 15 ounce can red beans, drained and rinsed
  • 1 - 14.5 ounce can tomatoes, diced
  • 1 - 4 ounce can green chilies, diced (mild or medium)
  • 1 1/2 cups corn, frozen
  • 1 1/2 cups bell peppers, diced (any color)
  • 1 1/2 cups onion, diced (red, yellow, or white)
  • 1 teaspoon (or to taste) chicken broth/seasoning, instant
  • 1 cup water
  • 2 - 3 tablespoons chili powder
  • 2 teaspoons garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon salt (to taste)

Instructions

  1. Combine all ingredients together in a crockpot and cook on high for 3 1/2 - 4 hours or low on 6 - 7 hours or until the vegetables are soft.
  2. Serve over rice or baked potatoes. This is also delicious served with tortilla chips.

Notes

You can substitute 8 ounces of chicken broth for the chicken seasoning and water.

To make this southwestern Bean Chili thinner you could add more water or substitute an 8 ounce can of tomato sauce in place of the tomato paste.

This Crockpot Chicken Cacciatore recipe is so easy! You just add the chicken and vegetables to your crockpot or slow cooker and let it cook while you do something else. This Chicken Cacciatore is delicious served over mashed potatoes, baked polenta, egg noodles or pasta, (spaghetti, fettuccine or penne). It is a hearty, healthy meal perfect for lunch or dinner.

Crockpot Chicken Cacciatore

Ingredients

  • 1 cup green bell pepper, chopped
  • 1 - 1 1/2 cup onion, chopped
  • 15.5 ounce can tomatoes, diced or chopped
  • 1/2 cup tomato juice
  • 2 - 3 teaspoons Italian seasoning
  • 1/2 teaspoon salt (or to taste)
  • 1/2 - 1 teaspoon pepper, fresh ground (or to taste)
  • 6 boneless skinless chicken breast halves (or pieces)

Instructions

  1. Combine bell pepper, onion, tomatoes, tomato juice, Italian seasoning, salt and pepper in a bowl.
  2. Spread about 1/2 cup of the vegetable mixture over the bottom of the crockpot.
  3. Lay half the chicken over the mixture.
  4. Spread the chicken layer with half of the remaining mixture.
  5. Lay the remaining chicken over the mixture layer.
  6. Cover and cook on low for 5 to 6 hours until the chicken is cooked but not mushy or dry.

Notes

This Chicken Cacciatore is delicious served over mashed potatoes, baked polenta, egg noodles or pasta, (spaghetti, fettuccine or penne).

  • 1 - 4 ounce can green chilies, chopped
  • 2 - 3 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt (or to taste)
  • 6 teaspoons vegetable broth/seasoning, instant
  • 6 cups water
  • 1/4 cup cilantro, chopped (or as desired)

Instructions

  1. : Combine all ingredients together in a crockpot.
  2. : Cover and cook on high for about 2 - 2 1/2 hours or low for 4 - 5 hours.
  3. : Top with chopped cilantro if desired and serve.

Notes

You can use 6 cups of liquid vegetable broth in place of the instant vegetable seasoning and water.

Top soup with diced cilantro as desired.

Crockpot Parmesan Potato Wedges

Ingredients

  • 2 1/2 pounds red potatoes
  • 1/2 cup onion, finely chopped
  • 1 1/2 teaspoons oregano, dried
  • 1/2 teaspoon salt
  • 1/4 - 1/2 teaspoon pepper, freshly ground
  • 1 - 2 tablespoons butter, cut in 1/8 inch pieces
  • 1/4 cup Parmesan cheese

Instructions

  1. Wash and dry the potatoes. Cut them into 1/2 inch wedges.
  2. Add potatoes, onion, oregano, salt and pepper to the crockpot.
  3. Mix ingredients together.
  4. Sprinkle butter pieces on top of the potatoes.
  5. Cover and cook on high for 3 1/2 - 4 hours.
  6. Sprinkle with Parmesan cheese as desired and serve.

Notes

I prefer Kosher salt for this recipe.

After cooking, add more salt and pepper if desired.
