Pumpkin Bars

Ingredients

  • 2 cups whole wheat flour
  • 1 cup walnuts chopped
  • 2 cups old fashioned oats
  • 2 eggs
  • 3 1/2 cups (29 ounce can) pumpkin, canned
  • 1/2 cup honey
  • 1 cup water
  • 1 teaspoon salt
  • 1 - 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 2 teaspoons vanilla
  • Cooking spray

Instructions

    1: Preheat oven to 350 degrees. Spray a 9 x 12 baking dish with cooking spray. Set aside.
    2: Stir together the flour and nuts. Set aside.
    3: Add remaining ingredients to a blender or food processor. Blend until smooth.
    4: Add to flour mixture and mix well.
    5: Pour into baking dish.
    6: Bake 40 - 45 minutes or until the edges and top starts to brown. Cool and enjoy!

Notes

You can chop the walnuts in your blender or food processor before you start the recipe (if they are not already chopped).
For a delicious variation, add 3/4 cup raisins and/or chocolate chips.
Make sure you use a food processor that is large enough to hold all the ingredients.

Apple Pie Filling

Ingredients

  • 8 - 9 cups apples, tart (sliced and peeled)
  • 3/4 cup (6 ounces) apple juice concentrate
  • 3 tablespoons water
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/8 teaspoon salt, Kosher
  • 3 tablespoons corn starch

Instructions

    1: Add the apples and juice concentrate to a large sauce pan. Bring to a simmer.
    2: Cover pan and simmer until the apples are tender.
    3: While the apples are cooking, stir together the water, vanilla, cinnamon, salt and cornstarch. Stir until the cornstarch is dissolved. Set aside.
    4: After the apples are soft, stir in the cornstarch mixture. Cook until the liquid thickens.
    5: Cool a bit, then pour into a pre-baked pie crust.
    6: Chill and serve. Top with whipped cream if desired.

Notes

Have a pre-baked 8 or 9 inch pie crust ready to pour the finished Apple Pie Filling into.
You do not need to peel the apples if you do not mind the texture of them after they are cooked.
You can use another type of salt if desired.

Apple Oat Pie Crust

Ingredients

  • 1 cup oat flour
  • 1/4 teaspoon Kosher salt
  • 1/2 cup applesauce, smooth

Instructions

    1: Preheat oven to 350 degrees.
    2: Mix together the oat flour and salt.
    3: Mix in the applesauce.
    4: Press the mixture into a pie pan. Start with the sides, then move to the bottom. (The mixture will be sticky)
    5: Bake for 20 to 25 minutes or until lightly browned.
    6: This pie crust is ready to be filled with a no-bake pie filling. Fill the pie crust at least several hours before serving. This will soften the crust.

Notes

You can use 1 1/4 cups of quick oats in place of the oat flour.
You may want to loosen the edges of the pie crust before cutting and removing from the pan.
You can use another salt if you do not have Kosher salt.

Peach Cobbler Filling (and cobbler instructions)

Ingredients

  • 8 cups (2 quarts) peaches, sliced or diced (fresh or frozen)
  • 12 ounce can apple juice concentrate, frozen
  • 1/2 cup honey
  • 1/2 cup cornstarch
  • 1 cup water
  • 1 teaspoon almond extract
  • Cooking spray

Instructions

      1: Spray 9 x 13 or 10 x 14 baking dish with cooking spray.
      2: In a large saucepan stir together the peaches, juice concentrate and honey. Bring the mixture to a boil.
      3: While waiting for the mixture to boil, stir the cornstarch together in the water until it is dissolved.
      4: When the peach sauce begins to boil, gradually stir in the dissolved cornstarch. Add more or less as needed to make the sauce as thick as a pie filling.
      5: Remove from the heat and stir in the almond extract.
      6: Pour the peach sauce into the baking dish.
      [7: Roll out the cobbler crust into a rectangle the size of the baking dish (see cobbler crust recipe).]
      8: Gently place the crust over the fruit. Adjust the sides of the dough to fit the dish.
      9: Pierce the dough several times with a sharp knife or fork. This will allow steam to escape while it is baking.
      10: Cover the cobbler with a clean damp kitchen towel or plastic wrap.
      11: Place the dish in a warm area and allow to rise until it is double in size (about 45-60 minutes).
      12: Place cobbler in a preheated 350 degree oven. Bake for 30 minutes or until golden brown.
      13. Cool as desired and serve. Delicious alone or topped with ice cream or whipped cream. Store cooled cobbler in the refrigerator.

Notes

You can substitute sugar for the honey if desired.
To more easily transfer the cobbler crust to the baking dish, roll the dough around the rolling pin. Then unroll it over the peach filling.
To reheat refrigerated cobbler, place it in a 300 degree oven for about 30 minutes.
