Cobbler Crust

Yield: Sized to fit a 9 x 13 inch or 10 x 14 inch rectangle pan (for a fruit cobbler)

Ingredients

  • 1/4 cup water, warm
  • 2 teaspoons yeast
  • 1/2 cup coconut milk
  • 1 teaspoon Kosher salt
  • 1/4 cup sugar
  • 2/3 cup plus 2 tablespoons whole wheat pastry flour
  • 2/3 cup white flour, unbleached (+ more for kneading)

Instructions

    1: Add the yeast to the warm water. Let sit 1 - 2 minutes. Stir to dissolve. It should be smooth and silky.
    2: Add the dissolved yeast and coconut milk to a mixing bowl.
    3: Stir in the salt, sugar and whole wheat pastry flour.
    4: Then add the white flour. Mix until completely combined. (Use a mixer with a dough hook if desired).
    5: Knead the dough into a ball.
    6: Place dough on a floured surface. Knead it into a smooth ball (about 1 - 2 minutes). Add more flour if needed to make it smooth.
    7: Roll the dough into a rectangle big enough to cover the baking pan.
    8: Gently place the dough over the fruit mixture in the baking pan. Adjust the dough so it reaches the inside edges of the pan.
    9: Continue the fruit cobbler recipe as instructed.

Notes

You can use another type of salt if desired.

No-Bake Oatmeal Walnut Cookies

Yield: About 24 cookies

No-Bake Oatmeal Walnut Cookies

Ingredients

  • 1 tablespoon flaxseeds, ground
  • 2 tablespoons water, warm
  • 1 1/2 cup dates, pitted
  • 1 cup walnuts, halves or pieces
  • 1 cup old fashioned oats
  • 2 tablespoons date or coconut sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon Kosher salt

Instructions

    1: Soak the flaxseeds in 2 tablespoons warm water. Set aside.
    2: Line a baking sheet with wax or parchment paper or a silicone mat. Set aside.
    3: Add the dates, walnuts and oats to a food processor. Process until crumbly and no big pieces are left. Scrape down the sides if needed.
    4: Add the flax mixture, sugar, vanilla, cinnamon and salt. Process until the mixture holds together. Add a bit of water if the dough is too dry to hold together.
    5: One tablespoon at a time, roll the dough into balls.
    6: Place the dough balls on the baking sheet. Flatten them down slightly with a fork, making a crisscross pattern. (Dip the fork in water if the dough sticks to the fork.)
    7: Refrigerate 4 - 6 hours or until the cookies are firm.

Notes

Soak your dates in water if they are very dry. Drain them before adding.

No-bake Cinnamon Pecan Pie Crust

No-bake Cinnamon Pecan Pie Crust

Ingredients

  • 1½ cup pecans, raw
  • 3 tablespoons coconut or date sugar
  • ½ teaspoon Kosher salt
  • 1½ teaspoons cinnamon
  • 1 tablespoon coconut oil

Instructions

    1: Combine the pecans, sugar, salt and cinnamon in a food processor. Process until the mixture is just blended.
    2: Add the coconut oil and process until the mixture is finely minced like a graham cracker crust.
    3: Transfer the mixture into a 9 inch pie pan or fluted tart pan.
    4: Press the mixture into the pans up the sides first. Then fill in the middle. Once the mixture is evenly distributed press the a bit more until the curst is even and firm.
    5: The crust is ready to be filled with a no-bake pie, tart or torte filling.

Notes

You can use another type of salt if you do not have Kosher salt.
This crust is delicious with a no-bake pie or ganache filling.

Frozen Dark Chocolate Almond Bananas

Frozen Dark Chocolate Almond Bananas

Ingredients

  • 1 large banana, ripe
  • 4 Popsicle sticks
  • 8 - 10 ounces chocolate, dark or bittersweet (or as needed)
  • 1 teaspoon coconut or vegetable oil
  • 1/4 cup almonds, chopped, toasted or dry roasted
  • 1/8 teaspoon Kosher salt (optional)

Instructions

    1: Line a baking sheet or tray with waxed paper.
    2: Cut the banana crosswise, then again lengthwise so you have 4 long pieces.
    3: Insert a popsicle stick lengthwise into each banana piece. Then place on baking sheet.
    4: Place bananas in the freezer until they are frozen (2 - 3 hours).
    5: After the bananas are frozen, microwave the chocolate, salt and oil in a glass cup or dish until melted. Start with 1 minute and stir. If needed microwave again for 30 seconds and stir again. Repeat until melted and smooth.
    6: Dip each frozen banana into the chocolate by holding the stick. Pull out and allow the excess chocolate to drip back in cup. Then scrape any excess chocolate off. Set them back on the tray.
    7: Before the chocolate sets, sprinkle with the chopped almonds. Work quickly so the chocolate doesn't harden before you get the nuts on.
    8: Put the dipped bananas back in the freezer until the chocolate is hard. Keep in the freezer until ready to serve.

Notes

You can use dry roasted or toasted almonds.

Chop the almonds small and coarse as desired.

Make sure there are no water drops on the dish or spoon that comes in contact with the chocolate. Any water can make the chocolate lumpy and hard.

You can use chocolate chips, bars and chunks. If you use bars break them into small pieces before melting. You can also use chocolate especially made for drizzling (sometimes called chocolate melts).
