Curried Lentils

Yield: 4 servings

Curried Lentils

Ingredients

  • 1 cup orange lentils, rinsed and drained
  • 1 teaspoon olive oil
  • 1 1/2 cup onion, chopped
  • 2 - 3 teaspoons garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 4 cups water
  • 4 teaspoons (or to taste) vegetable broth/seasoning dried
  • 2 cups kale, finely chopped
  • 2 teaspoons curry powder
  • 1 - 15 ounce can tomatoes, diced (including juice)
  • 2 - 3 tablespoons (to taste) cilantro, chopped
  • Kosher salt to taste
  • Pepper, fresh ground to taste

Instructions

  1. Check lentils and remove any debris. Rinse and drain in strainer.
  2. In a medium pot, heat 1 teaspoon of olive oil over medium heat.
  3. Add onion, garlic, celery and carrots to the heated oil and sauté vegetables until the onions are soft.
  4. Stir in the curry powder.
  5. Add lentils, water, vegetable seasoning and tomatoes. Stir together and bring to a boil.
  6. Reduce the heat to medium low and simmer until the lentils are tender (about 5 –7 minutes).
  7. Add kale and simmer 5 more minutes or until the kale is as soft as you would like it.
  8. Add salt and pepper to taste. Serve.

Notes

Dice the carrots and celery in about 1/4 inch pieces.

Crockpot Chicken Cacciatore

This Crockpot Chicken Cacciatore recipe is so easy! You just add the chicken and vegetables to your crockpot or slow cooker and let it cook while you do something else. Crockpot Chicken Cacciatore

Ingredients

  • 1 cup green bell pepper, chopped
  • 1 - 1 1/2 cup onion, chopped
  • 15.5 ounce can tomatoes, diced or chopped
  • 1/2 cup tomato juice
  • 2 - 3 teaspoons Italian seasoning
  • 1/2 teaspoon salt (or to taste)
  • 1/2 - 1 teaspoon pepper, fresh ground (or to taste)
  • 6 boneless skinless chicken breast halves (or pieces)

Instructions

  1. Combine bell pepper, onion, tomatoes, tomato juice, Italian seasoning, salt and pepper in a bowl.
  2. Spread about 1/2 cup of the vegetable mixture over the bottom of the crockpot.
  3. Lay half the chicken over the mixture.
  4. Spread the chicken layer with half of the remaining mixture.
  5. Lay the remaining chicken over the mixture layer.
  6. Cover and cook on low for 5 to 6 hours until the chicken is cooked but not mushy or dry.

Notes

This Chicken Cacciatore is delicious served over mashed potatoes, baked polenta, egg noodles or pasta, (spaghetti, fettuccine or penne).

Salsa Chicken

Ingredients

  • 2 - 2 1/2 pounds boneless, skinless chicken breasts (halves or pieces)
  • 3 cups salsa
  • 3 - 4 tablespoons brown sugar

Instructions

  1. Spray crockpot with cooking spray.
  2. Stir the brown sugar into the salsa.
  3. Place half the chicken in a layer over the bottom of the crockpot.
  4. Spread half of the salsa mixture over the chicken.
  5. Lay the rest of the chicken over the salsa layer.
  6. Spread the rest of the salsa mixture over the chicken.
  7. Cover and cook on high for 3 - 4 hours or on low for 6 - 8 hours until the chicken is cooked through, but not dry or mushy.

Notes

You can use mild, medium or hot salsa in this recipe. You could also try fruited salsa like peach or mango. This is a fun recipe to experiment with many different types of salsa!

This chicken is also delicious served with rice, couscous and quinoa.

Crockpot Cuban Black Beans

Ingredients

  • 1 pound black beans, dried
  • Water
  • 1 1/2 cups onion, chopped
  • 2 tablespoons onion powder
  • 1 tablespoon soy sauce, low sodium
  • 2 - 3 teaspoons garlic, minced
  • 2 - 3 teaspoons cumin, ground
  • 1 - 2 teaspoons garlic powder
  • 1/4 cup lemon juice
  • 1 - 2 teaspoons salt, Kosher
  • 1/4 cup cilantro, minced (optional)

Instructions

  1. Sort beans and remove stones and debris. Rinse them in a colander.
  2. Place beans in the crockpot. Cover with 8 cups cold water and soak overnight (at least 8 hours).
  3. Drain water and rinse beans in a colander.
  4. Put beans back in crockpot with about 3 1/2 cups of clean water.
  5. Stir in the onion, onion powder, soy sauce, minced garlic, cumin, and garlic powder.
  6. Cook on high for about 4 - 5 hours or low for about 12 - 14 hours or until the beans are as soft as you would like them.
  7. When the beans are soft, stir in the salt and lemon juice.
  8. Taste the beans and if needed, add more salt and spices to your taste. Let the beans cook for 5 - 10 minutes longer.
  9. Serve the Cuban Black Beans over rice, couscous, or quinoa. Top with minced cilantro if desired.

Notes

For an average cooker cook on high 4 hours or low, 12-12 1/2 hours. If your cooker is faster or slower adjust the times.

You can substitute Bragg's Liquid Aminos for the soy sauce.
