Pineapple Orange Sauce

Pineapple Orange Sauce

Ingredients

  • 2 cups or 1 - 20 ounce can crushed pineapple, unsweetened
  • 1/2 cup orange juice concentrate
  • 1/4 cup honey
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • 1/4 teaspoon lemon extract

Instructions

  1. Stir together the pineapple, orange juice concentrate, and honey in a saucepan. Continue to stir as the mixture comes to a boil.
  2. While waiting for the boil get the cornstarch mixture ready; In a measuring cup, dissolve the cornstarch in the water.
  3. Slowly stir the dissolved cornstarch mixture into the fruit filling. Do not stop stirring.
  4. Stir in the lemon extract.
  5. Continue to stir until the filling is thick. Remove from the heat and allow it to cool.
  6. Chill the filling in the refrigerator. The filling will continue to thicken in the refrigerator. When the filling is thick and chilled it is ready to spread on French toast, pancakes, toast, or as a filling for sandwiches or my Orange Cake recipe.

Notes

Make sure to keep stirring the filling mixture as long as it is on the heat or it will get lumpy and stick on the bottom of the pan.

Crockpot Pine-Applesauce

Try this easy, healthy apple and pineapple recipe in your crockpot! Karen Breyer’s cooking video shows you how to make this delicious Crockpot Pine-Apple sauce. Is it a applesauce recipe or a pineapple sauce recipe? It is both! This is a delicious combination of baked apples with a pineapple accent. Watch this cooking video to see how easy this recipe is to make in your crockpot or slow cooker!

Yield: 8 servings

Crockpot Pine-Applesauce

Ingredients

  • 1/2 cup dried pineapple, chopped
  • 1 cup water
  • 8 cups apples, sliced and cored
  • 1 teaspoon vanilla (optional)
  • 1 teaspoon cinnamon (optional)
  • 1/8 teaspoon nutmeg, ground (optional)

Instructions

  1. Add the pineapple and water to a blender. Before blending, let set for 30 minutes to soften the pineapple.
  2. Core and slice the apples.
  3. After the pineapple has soaked, blend it until it is smooth.
  4. Add the apples and pineapple mixture to the crockpot and stir so the apples are coated. Stir in the cinnamon and nutmeg if you would like.
  5. Cook the apples until they are soft. On low for about 3 1/2 to 4 hours. On high for about 2 1/4 to 3 1/2 hours.
  6. When the apples are soft, mash them with a potato masher until they are as chunky or smooth as you would like them.
  7. Stir in the vanilla if desired. Serve warm, chilled or room temperature.

Notes

Honeycrisp, Fuji, McIntosh, Jonathan, Golden Delicious, Braeburn, and Rome apples are good choices for applesauce. Fuji and Honeycrisp apples are pretty sweet and very good choices. You can mix different types of apples.

You can peel the apples if you want to. If you don’t make sure to wash the apples well.

You can slice or chop the apples. They do not need to be neat since you are going to mash them later.

Softer apples with cook faster than firm apples. Small pieces will cook faster than firm apples.

Instead of a using a potato masher, you can blend the cooked apples with an immersion blender or blend them in a high-speed blender.

You can substitute 2 tablespoons of lemon juice for the pineapple and water. These additions are to keep the apples from browning.

You can store this applesauce in the refrigerator for 1 to 2 weeks and in the freezer for about 2 months.

Fruity Fruit Sauce

Fruity Fruit Sauce

Ingredients

  • 5 - 6 cups fruit, diced, sliced, or whole (small fruits) (fresh or frozen)*
  • 1 - 12 ounce can apple juice concentrate
  • 1 1/2 cup water (divided)
  • 1/3 cup cornstarch

*Fruit Possibilities (choose one):

  • Apples
  • Apricots
  • Blackberries
  • Blueberries
  • Cherries
  • Mangos
  • Peaches
  • Pears
  • Raspberries
  • Strawberries
  • And more!

Instructions

  1. Place fruit, juice concentrate, and 1 cup of water in a saucepan. Stir.
  2. Place pan over high heat until mixture begins to boil. Stir occasionally.
  3. Reduce heat and simmer about 5 minutes. Stir occasionally.
  4. While mixture is simmering, mix cornstarch with 1/2 cup of water. Stir until cornstarch is dissolved.
  5. After fruit mixture finishes simmering, remove it from the heat.
  6. Stir dissolved cornstarch again and slowly stir it into the fruit mixture.
  7. Return pan to a medium-high heat and bring the fruit mixture to a boil.
  8. Reduce heat and stir until the fruit sauce becomes thick. The fruit sauce will continue to thicken as it cools.
  9. Serve this fruit sauce hot or cold.

Notes

Fruity fruit sauce is delicious over waffles, French toast, pancakes, toast and more.

This fruit sauce served over toast and peanut butter is an easy and delicious breakfast, lunch, dinner or snack!

If the fruit is diced small, try this sauce in a peanut butter sandwich in place of jelly.

Fruit Salad

Fruit Salad

Ingredients

  • Variety of colorful fruits (fresh, frozen, and/or canned)

Instructions

  1. Rinse fresh fruits. Drain canned fruits and thaw frozen fruits as desired.
  2. Gently mix fruits together in a bowl.
  3. Refrigerate until ready to serve.

Notes

Acidic fruit juices (like pineapple, orange, or lemon) will keep cut fruits (like bananas and apples) from turning brown. Add enough juice to coat the fruits.

Give frozen fruits enough time to thaw.

Frozen fruits will help to chill the salad and keep it cold for a while. This is nice when taking the fruit salad to a picnic, potluck or another location.

You can also add nuts or coconut if you would like.
