Vegan Cheese Sauce

Yield: About 3 cups

Vegan Cheese Sauce

Ingredients

  • 1 cup cashews, raw
  • 2 cups water
  • 1/4 cup pimentos, canned
  • 1 - 2 teaspoons Kosher salt
  • 2 teaspoons onion powder
  • 2 tablespoons nutritional yeast flakes
  • 1/2 - 1 teaspoon garlic powder

Instructions

  1. Add the ingredients to a blender. Blend until smooth.
  2. Add the mixture to a medium saucepan.
  3. Bring the mixture to a bowl while stirring constantly.
  4. Reduce to a simmer and continue to stir. Cook the sauce until it is thick.
  5. Remove the pan from the heat and it is ready! This vegan cheese sauce is delicious on potatoes, pasta, pizza, burritos and more.

Notes

Store leftovers in the refrigerator.

Basil Pesto

Try this fresh, flavorful easy Basil Pesto sauce recipe! It’s a tasty sauce for your pasta, pizza, bread, and sandwiches. Store some in your fridge and enjoy it anytime!

Yield: about 1 cup

Basil Pesto

Ingredients

  • 1/2 cup pine nuts or walnuts, toasted
  • 2 cups fresh basil
  • 2 teaspoons minced garlic
  • 1/3 cup olive oil
  • 1/4 - 1/2 cup Parmesan cheese
  • 1/2 teaspoon Kosher salt (or to taste)
  • 1/8 teaspoon fresh ground pepper (or to taste)

Instructions

  1. Add the nuts and basil to a food processor or blender. Pulse the ingredients together until mixed.
  2. Add the rest of the ingredients and blend to a smooth paste.
  3. Store in the refrigerator until ready to use. Toss Basil Pesto with pasta, spread it on a sandwich, crackers or toast, dollop over potatoes, or spread it on a pizza crust and make pizza!

Notes

You can use 4 garlic cloves in place of the minced garlic or to your taste.

Store this Basil Pesto in the refrigerator until you are ready to use it. Freeze for up to 3 months.

Chunky Tomato Sauce

Ingredients

  • 14.5 ounce can diced tomatoes
  • 6 ounce can tomato paste
  • 3/4 - 1 cup water
  • 1 teaspoon garlic powder
  • 1/2 - 1 teaspoon onion powder
  • 1 teaspoon honey
  • 2 - 3 teaspoons Italian seasoning
  • 1/2 - 1 teaspoon (or to taste) salt

Instructions

  1. Add all the ingredients to a large saucepan. Stir after adding each ingredient.
  2. Bring to a boil over medium-high heat, then reduce to a simmer.
  3. Simmer 20 minutes, stirring occasionally.
  4. Serve over pasta or use in pasta dishes.

Notes

Add more or less water depending on how thick you like your tomato sauce. The sauce will become thicker as it simmers.

This Chunky Tomato Sauce is especially good over spaghetti. It is also delicious as a pizza sauce.

You can double this recipe if you want.

Tzatziki Sauce

Yield: 8 servings

Tzatziki Sauce

Ingredients

  • 8 ounces Greek yogurt, plain
  • 1 cup cucumber, peeled, seeded, and diced
  • 1 teaspoon garlic, minced
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice, fresh
  • 1/4 teaspoon salt, Kosher (to taste)
  • 1/8 teaspoon pepper, ground (to taste)
  • 1 teaspoon dill, fresh (chopped)

Instructions

  1. Add the yogurt, cucumber, garlic, lemon zest, lemon juice to a blender or food processor. Blend until well combined.
  2. Add salt and pepper to taste. Blend to mix.
  3. Add dill and just barely mix it in but do not blend it.
  4. Chill and serve.

Notes

You can double this Tzatziki Sauce recipe if you want.

Add more cucumber for a thinner sauce and less for a thicker sauce.

You can adjust the spices and seasonings to your taste.

For the best flavor chill at least one hour.

Tzatziki is a traditional Greek yogurt cucumber dip/sauce. It is often served on pita bread and falafel.
