No-bake Chocolate Lemon Macaroons

Macaroons are a delicious coconut based cookie that are very easy to make. Put some of these Chocolate Lemon Macaroons in a pretty box and they are a perfect gift for the holidays or any occasion. If you don’t feel like cooking I think you will love this no-bake recipe that has only a few ingredients. This Chocolate Lemon Coconut Macaroons recipe is so easy to make! Yield: 12 - 16

No-bake Chocolate Lemon Macaroons

Ingredients

  • 1/2 cup cashews, raw
  • 2 cups coconut, dried (unsweetened)
  • 3 tablespoons lemon zest, fresh
  • 1/2 teaspoon Kosher salt
  • 1/4 cup agave or honey
  • 1/3 cup chocolate chips or chunks (bittersweet, dark or milk chocolate)

Instructions

  1. Prepare the fresh lemon zest and set aside.
  2. Place the cashews in a food processor. Process until they are a fine meal. Add the cashew meal to a mixing bowl.
  3. Add the coconut, lemon zest and salt to the food processor. Process to mix these ingredients.
  4. Continue to process the ingredients and slowly add the agave. Process until the mixture begins to stick together and forms a ball. You may need to stop and scrape down the sides a few times while processing.
  5. Stir the coconut mixture in with the cashew meal. The mixture should be wet enough to form a ball. If it is not, add a bit more agave. If the mixture is too wet, add a bit more coconut.
  6. With a small ice cream scoop or just with your hands, form the mixture into balls and place on a tray lined with wax paper.
  7. Place the chocolate chips in a microwave safe container. Heat in the microwave for 30 second intervals until the chocolate is liquidy when stirred.
  8. Drizzle the chocolate over each lemon macaroon.
  9. Place the macaroons in the refrigerator to chill. Once they are completely chilled they are ready to serve.

Notes

Sea salt can be used in place of Kosher salt if desired.
Add more or less chocolate as desired.

Yield: About 4 cups

Raspberry Grape Jam

Ingredients

  • 1 12 ounce can grape juice concentrate (100% juice)
  • 1 can (12 ounces) water
  • 2 tablespoons lemon juice
  • 1/2 cup cornstarch
  • 4 - 5 cups raspberries, frozen

Instructions

  1. In a saucepan, mix together the grape juice concentrate, water and lemon juice in a large saucepan.
  2. Slowly add the cornstarch while you are stirring the mixture. Continue to stir until the cornstarch is completely dissolved.
  3. Once the cornstarch is dissolved, heat the mixture over medium heat while constantly stirring.
  4. Continue to heat and stir the mixture until it is thickened. Next take the mixture off the heat and stir in the raspberries.
  5. Transfer the Raspberry-grape Jam into a container. Cover and refrigerate. This jam is delicious on toast, pancakes, ice cream, in sandwiches and more.

Notes

I use non-GMO cornstarch. You could also use arrowroot powder.

Store this Raspberry-grape Jam up to 2 weeks in the refrigerator.

While you are heating and stirring the jam make sure to frequently scrape the bottom of the pan as the jam thickens faster on the bottom.

Baked Barbecued Chicken Wings

Ingredients

  • 6 - 8 chicken wings
  • Barbecue sauce
  • 2 tablespoons molasses

Instructions

  1. Preheat the oven to 350 degrees.
  2. Place the chicken wings in baking dish.
  3. Brush the chicken wings with barbecue sauce.
  4. Drizzle the chicken with molasses.
  5. Bake at 350 degrees for about 35 to 45 minutes or until the chicken wings are cooked thoroughly.
  6. Baste the chicken wings with the cooking juices a few times during cooking.
  7. Serve.

Notes

You can adjust the recipe to make more or less Baked Barbecued Chicken Wings.

Cranberry Walnut Truffles

Make creamy, chocolatey Cranberry Walnut Truffles! These yummy chocolate truffles are filled with healthy walnuts and cranberries! I even used dark chocolate to make these a little healthier. You can also prepare them with semi-sweet or bittersweet chocolate.

In this cooking video Karen Breyer will show you step-by-step how to make Cranberry Walnut Truffles. These creamy, chocolatey truffles have only four ingredients and are very easy to make. This is a perfect candy recipe for beginners to try.

I think these Cranberry Walnut Truffles are an excellent choice if you are trying to eat healthier and love chocolate. The cranberries and walnuts in this recipe are super good for you and dark chocolate has its health benefits too!

These Cranberry Walnut Truffles are perfect for a chocolatey snack or dessert. I also like to give these truffles as a gift. I pack them in a nice candy box with a see-through lid. Yield: About 30 truffles

Cranberry Walnut Truffles

Ingredients

  • 3/4 cup heavy whipping cream
  • 10 ounces chocolate chips, semi-sweet or bittersweet
  • 2/3 cup cranberries, dried
  • 2 cups walnut, toasted and finely chopped

Instructions

  1. Pour the cream in a small pan. Heat the cream until it starts to boil around the edges.
  2. Add the chocolate and whisk until the chocolate is melted and smooth.
  3. Turn off the heat and stir in the cranberries.
  4. Pour the mixture into a 9 inch pie pan or square pan.
  5. Refrigerate the chocolate 1 - 2 hours or until firm.
  6. Scoop the chocolate with a teaspoon in about 1 inch-size pieces and place them on a baking sheet or tray. Refrigerate until firm, about 30 minutes.
  7. Pour the walnuts into a dish or pie pan. Roll the chocolate in the nuts. Then roll the chocolate into a ball between your palms.
  8. Next, gently roll them again in the nuts.
  9. Store the truffles in the refrigerator until ready to serve.

Notes

You can use chocolate chips or chop chunks of chocolate into small pieces.

To toast walnuts:
1. Preheat oven to 350 degrees.
2. Spread walnuts in a single layer on a baking sheet.
3. Bake 10 - 15 minutes, until they just start to brown. Larger nuts will take longer to cook than smaller nuts. Check them frequently so they do not burn.

Let the walnuts cool before chopping them.
