Toasted Walnuts

Need toasted or roasted walnuts? Learn how to Toast Walnuts in the oven!  In this video Karen Breyer will show you an easy way to toast walnuts in the oven. Toasting or roasting walnuts in the oven will give you more even browning than the skillet method. Toasted walnuts are delicious and can be eaten plain or used in many recipes. Yield: 2 cups

Toasted Walnuts

Ingredients

  • 2 cups walnuts, shelled and raw

Instructions

  1. Preheat oven to 350 degrees.
  2. Spread walnuts in a single layer on a baking sheet.
  3. Bake 10 to 15 minutes until the walnuts just start to brown and have a nutty aroma.

Notes

Larger nuts take longer to cook than smaller nuts.

Yield: 6 - 8 servings

Baked Tofu Fries

Ingredients

  • 2 blocks tofu, firm
  • Olive oil
  • Salt, to taste
  • Pepper, to taste
  • Cooking spray

Instructions

  1. Preheat oven to 375 degrees.
  2. Spray baking sheet with cooking spray.
  3. Drain liquid off tofu. Press tofu with paper towels to remove as much moisture as you can.
  4. Slice tofu into 1/3 - 1/2 inch sticks (like French fries).
  5. Lay tofu sticks on baking sheet. Brush tofu sticks with olive oil or spray with cooking spray.
  6. Sprinkle tofu sticks with salt and pepper.
  7. Bake about 25 minutes or until fries are crispy and golden.
  8. Serve while hot and crispy.

Notes

These tofu fries are delicious dipped in ketchup.

Before baking sprinkle tofu sticks with onion or garlic powder for a delicious flavor.

Roasted Red Potatoes

Yield: 6 servings

Roasted Red Potatoes

Ingredients

  • 2 pounds red potatoes, small (cleaned)
  • 2 - 3 tablespoons olive oil
  • 1 teaspoon garlic, powder or granules
  • 1 teaspoon onion, powder
  • 1 teaspoon salt, Kosher
  • 1 - 2 teaspoons rosemary, dried
  • Pepper, fresh ground (to taste)

Instructions

  1. Preheat oven to 425 degrees. Cover a baking sheet with foil and spray with cooking spray.
  2. Pat the potatoes dry with a clean towel if they are still wet from washing.
  3. Cut the potatoes in quarters, thirds or halves.
  4. In a large bowl, stir together the potatoes and oil.
  5. Next add the seasonings to the oiled potatoes. Stir until the seasonings are evenly covering the potatoes.
  6. Spread the potatoes in a single layer on the baking sheet.
  7. Bake uncovered 40 to 45 minutes, turning half way through the baking time. Potatoes are done when they soft inside and crispy and golden brown on the outside.
  8. Serve hot as a delicious side dish!

Notes

Adjust all the seasonings to taste. You can also experiment with other seasonings.

If you try to mix the oil with wet potatoes, the oil does not coat the potatoes as well. You can wash them ahead of time or just pat them dry with a clean towel or paper towel.

Cut the potatoes in similar sizes. Smaller potatoes cook faster, larger ones take longer. You do not need to cut the very small potatoes.

You can also add some small yellow and/or blue potatoes for a nice color and taste combination.

You can use fresh or dried rosemary. If you use fresh, use 3 times the amount of dried. For this recipe use 1 - 2 tablespoons fresh rosemary instead of dried (or to taste).

Some people and kids may want to dip these potatoes in ketchup!

Crockpot Pine-Applesauce

Try this easy, healthy apple and pineapple recipe in your crockpot! Karen Breyer’s cooking video shows you how to make this delicious Crockpot Pine-Apple sauce. Is it a applesauce recipe or a pineapple sauce recipe? It is both! This is a delicious combination of baked apples with a pineapple accent. Watch this cooking video to see how easy this recipe is to make in your crockpot or slow cooker!

Yield: 8 servings

Crockpot Pine-Applesauce

Ingredients

  • 1/2 cup dried pineapple, chopped
  • 1 cup water
  • 8 cups apples, sliced and cored
  • 1 teaspoon vanilla (optional)
  • 1 teaspoon cinnamon (optional)
  • 1/8 teaspoon nutmeg, ground (optional)

Instructions

  1. Add the pineapple and water to a blender. Before blending, let set for 30 minutes to soften the pineapple.
  2. Core and slice the apples.
  3. After the pineapple has soaked, blend it until it is smooth.
  4. Add the apples and pineapple mixture to the crockpot and stir so the apples are coated. Stir in the cinnamon and nutmeg if you would like.
  5. Cook the apples until they are soft. On low for about 3 1/2 to 4 hours. On high for about 2 1/4 to 3 1/2 hours.
  6. When the apples are soft, mash them with a potato masher until they are as chunky or smooth as you would like them.
  7. Stir in the vanilla if desired. Serve warm, chilled or room temperature.

Notes

Honeycrisp, Fuji, McIntosh, Jonathan, Golden Delicious, Braeburn, and Rome apples are good choices for applesauce. Fuji and Honeycrisp apples are pretty sweet and very good choices. You can mix different types of apples.

You can peel the apples if you want to. If you don’t make sure to wash the apples well.

You can slice or chop the apples. They do not need to be neat since you are going to mash them later.

Softer apples with cook faster than firm apples. Small pieces will cook faster than firm apples.

Instead of a using a potato masher, you can blend the cooked apples with an immersion blender or blend them in a high-speed blender.

You can substitute 2 tablespoons of lemon juice for the pineapple and water. These additions are to keep the apples from browning.

You can store this applesauce in the refrigerator for 1 to 2 weeks and in the freezer for about 2 months.
