Apple Almond Cheese Balls

Ingredients

  • 1/2 cup dried apples, chopped
  • 1/2 cup almonds, chopped
  • 4 tablespoons coconut, flaked
  • 1/2 cup cream cheese

Instructions

  1. Mix the apples, almonds and coconut together in a medium-sized bowl.
  2. Add the cream cheese and mix well.
  3. Form the cheese mixture into balls (makes about 24).
  4. Serve. Store leftovers in the refrigerator.

Notes

You can use raw or toasted almonds.

You can use low-fat cream cheese or vegan cream cheese if you prefer.

Soften the cream cheese at room temperature for easier mixing.

You can make this recipe in a food processor. Add the dried apples, almonds and coconut. Process until the almonds and apples are chopped or finely ground (whichever you prefer). Add the cream cheese and process until the mixture is well combined. Shape into balls and serve.

Baked Sweet Potatoes

Do you love Sweet Potatoes? Did you know this Super-healthy vegetable is also super-easy to bake? In this cooking video Karen Breyer and her dad will show you step-by-step how to make Baked Sweet Potatoes. This recipe is so easy that any beginner cook can make them.

Sweet potatoes are healthy and a perfect side dish or main dish for many occasions. This is a perfect recipe to keep everyone happy as they can put custom toppings on top of their potato. Try topping baked sweet potatoes with chili and sour cream for a hearty, healthy meal. The possibilities are endless! Watch this cooking video and serve some Baked Sweet Potatoes for dinner tonight!

Yield: 6 servings

Baked Sweet Potatoes

Ingredients

  • 6 sweet potatoes (or as desired)

Instructions

  1. Preheat oven to 425 degrees.
  2. Wash and dry your sweet potatoes.
  3. With a fork, poke holes all over the sweet potatoes so the steam can escape when they are cooking.
  4. Place the sweet potatoes on a foil-lined baking sheet and cook 45 - 60 minutes or until the potato is soft all the way through. You can test this with a knife. (Smaller potatoes will cook faster and larger ones will take longer)
  5. Make a slit in the top of the sweet potatoes and serve. Add toppings of your choice.

Notes

You can also use this recipe to bake yams.

Test the doneness by poking a knife in the largest part of the yam. When they are soft and tender they are done.

Adjust the number of sweet potatoes to how many you need.

The foil will make clean up much easier because the potatoes will ooze as they cook.

Top with butter, salt, pepper, sour cream, chili, beans and more.

Roasted Parmesan Green Beans

Yield: 4 servings

Roasted Parmesan Green Beans

Ingredients

  • 1 pound green beans, fresh, trimmed
  • 1/4 - 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper, fresh ground (to taste)
  • 1/2 teaspoon Kosher salt (or to taste)
  • 2 tablespoons Parmesan cheese, grated
  • 1 - 2 teaspoons olive oil

Instructions

  1. Preheat the oven to 400 degrees. Line a baking sheet with foil.
  2. Rinse and dry the green beans.
  3. In a small bowl, mix together the garlic powder, pepper, salt and Parmesan .
  4. Lay the green beans on the baking sheet.
  5. Mix together the oil and green beans so the beans are coated with oil.
  6. Toss the green beans and spice mixture together.
  7. Spread the green beans evenly on the baking sheet. Avoid overlapping.
  8. Roast 15 - 20 minutes (or until desired doneness), stirring half-way through.
  9. Add more salt or pepper if desired. Serve.

Notes

You can add the Parmesan cheese with the spices before roasting or sprinkle the Parmesan when they are done.

Instead of foil you can use parament paper or spray the pan with cooking spray.

I use my hands to mix the green beans with the oil and spices. Messy, but fast!

Adjust the spices to taste.

Bake the green beans to your desired darkness and doneness.

Baked Corn on the Cob

Love Corn on the Cob? Hate husking it and dealing with all that stubborn silk? Karen Breyer and her dad will show you the easiest way to cook and husk corn with this oven method! The corn comes out so tasty and perfectly cooked!

This Baked Corn on the Cob recipe is the easiest method to cook corn on the cob. You don’t need to take time husking it and trying to get all the silk off. You can bake the corn with the husk on and it will peel right off after it is cooked. You can even use the husk as a handle. Cooking Corn on the Cob this way is so easy and it’s fun to eat too! Baked Corn on the Cob

Ingredients

  • 8 ears corn, unhusked

Instructions

  1. Preheat the oven to 350 degrees.
  2. Trim any loose pieces from the corn husks. Keep the husks unopened so they completely cover the corn.
  3. Stack the corn on cookie sheet or directly on the oven rack.
  4. Bake corn for 30 minutes.
  5. Remove the corn from the oven. Pile the corn on a platter or large bowl.
  6. Each person can peel back the husks and use it as a handle. Enjoy!

Notes

You can adapt this recipe to vary the number of servings. Prepare 2 ears of corn per person.
