Crockpot Roasted Garlic

Roasting Garlic in a crockpot is super easy! Learn how to roast whole heads of garlic in a crockpot or slow cooker! Spread roasted garlic on toast, crackers or bread. Stir it into soups, pasta or mashed potatoes. It is very yummy as a spread on sandwiches. You can also dice the roasted garlic cloves and sprinkle them over pasta, pizza, vegetables or beans. Using roasted garlic is the perfect way to make healthy garlic bread or toast.

Yield: 6 - 8 servings

Crockpot Roasted Garlic

Ingredients

  • 3 - 4 (or as desired) garlic bulbs
  • 1 - 2 teaspoons olive oil (per garlic bulb)
  • Kosher salt (to taste)
  • Pepper, fresh ground (to taste)

Instructions

  1. Cut a 1/4 to 1/2 inch slice from the top of the garlic bulbs. Cut off enough so the cloves are exposed.
  2. Carefully peel off the outer paper-like skin from the garlic bulbs. Leave enough to hold the cloves together.
  3. Place the bulbs in a glass bowl or small wide mouth jar. Use more than one bowl or jar as needed to fit the number of bulbs. Arrange the bulbs so they will stay upright.
  4. Drizzle 1 - 2 teaspoons of olive oil over each bulb.
  5. Sprinkle with salt and pepper.
  6. Cover the bowl with foil.
  7. Place the glass bowl on a trivet like a metal jar lid or canning ring so the glass is not touching the bottom of the crockpot.
  8. Cook on high for 1 1/2 - 2 hours or until the garlic is tender when pierced with a fork or toothpick.
  9. Squeeze the garlic out of the cloves. Sprinkle with more salt and pepper if desired.

Notes

Spread the creamy roasted garlic on toast, crackers or bread. Stir it into soups, pasta or mashed potatoes. You can also dice the roasted cloves and sprinkle over pasta, pizza, vegetables or beans.

Instead of roasting the garlic in a glass dish you can wrap each bulb tightly in foil.

Yield: 4 - 6 servings

Chia Pudding

Ingredients

  • 1/2 cup chia seeds
  • 2 cups water
  • 1 cup raisins
  • 1 cup walnuts, chopped
  • 1/2 teaspoon vanilla extract (optional)
  • 3 cups milk, dairy free (more or less to taste)

Instructions

  1. In a bowl, stir together the chia seeds and water. Make sure the seeds are completely covered. Soak a few hours or overnight.
  2. Stir the rest of the ingredients into the soaked chia seeds.
  3. Add additional ingredients if desired.
  4. Serve. Store leftovers in the refrigerator for up to 5 days.

Notes

Add additional ingredients as desired. Some tasty options are cinnamon, nutmeg, cocoa, vanilla, flavored extracts, orange and lemon zest, berries, diced fresh fruit, dried fruit, chopped dates, nuts, honey, maple syrup, fruit jams, agave, and more.

You may want to add a pinch or two of Kosher or sea salt to taste.

Easy Fruit Dip

Ingredients

  • 8 ounce container yogurt, plain
  • 1/4 cup peach or apricot preserves
  • 1/8 teaspoon cinnamon, ground
  • 1/2 teaspoon vanilla
  • Fruit slices (apple, peach, pear, or mango)

Instructions

  1. Stir together the yogurt, preserves, cinnamon and vanilla.
  2. Refrigerate until well-chilled.
  3. Serve as a dip for fruit slices.

Notes

To keep your apple, peach or pear slices from browning, brush them with lemon juice or soak them in a mixture of lemon juice and water (1 tablespoon of lemon juice in 1 cup of water).

You can use sour cream, fat-free sour cream or vegan sour cream in place of the yogurt.

Apple Almond Cheese Balls

Ingredients

  • 1/2 cup dried apples, chopped
  • 1/2 cup almonds, chopped
  • 4 tablespoons coconut, flaked
  • 1/2 cup cream cheese

Instructions

  1. Mix the apples, almonds and coconut together in a medium-sized bowl.
  2. Add the cream cheese and mix well.
  3. Form the cheese mixture into balls (makes about 24).
  4. Serve. Store leftovers in the refrigerator.

Notes

You can use raw or toasted almonds.

You can use low-fat cream cheese or vegan cream cheese if you prefer.

Soften the cream cheese at room temperature for easier mixing.

You can make this recipe in a food processor. Add the dried apples, almonds and coconut. Process until the almonds and apples are chopped or finely ground (whichever you prefer). Add the cream cheese and process until the mixture is well combined. Shape into balls and serve.
