Orange-Apricot Balls

Orange-Apricot Balls

Ingredients

  • 10 oz. dried apricots
  • 2/3 cup whole almonds, toasted
  • 2 tablespoons powdered sugar
  • 2 tablespoons orange zest (from 2 oranges)
  • 2 tablespoons orange juice
  • 1/2 teaspoon salt
  • 1/3 to 1/2 cup chocolate chips or chunks (semi-sweet, or dark)

Instructions

  1. Wash and dry oranges. Zest oranges, set aside.
  2. Separately chop apricots and almonds in a food processor or strong blender.
  3. In a large bowl, mix together the chopped apricots and almonds.
  4. Stir in sugar, orange zest, salt, and orange juice.
  5. Roll mixture into 1 inch balls and place on a cookie sheet.
  6. Microwave chocolate in a glass container on high until melted. Start with one minute and stir. If needed, microwave a little longer (30 second increments) and stir again. Repeat until chocolate is melted.
  7. Spread the chocolate on top of the apricot-orange balls. Set them aside until the chocolate hardens.
  8. After the chocolate is dry serve!

Notes

Place leftover candies in an airtight container.

Store them in the refrigerator for up to a week.

This Pizza Nacho recipe is perfect for an appetizer, snack and in my opinion a main course! As a matter of fact I would eat these nachos for breakfast! Choose a healthy tomato sauce and you have a vegetable. Choose low-fat Mozzarella cheese and you have a low-fat protein. The tortilla chips are made from a whole grain and I am sure oregano must have some vitamins! I think these Pizza Nachos will be your best-ever healthy snack, appetizer, breakfast, lunch, dinner and game snack recipe! Watch this cooking video and try this Pizza Nacho recipe today!

Pizza Nachos

Ingredients

  • 2 ounces tortilla chips
  • 1/2 - 3/4 cup tomato sauce, pasta sauce, pizza sauce or marinara sauce
  • 1/2 cup mozzarella cheese, shredded
  • 1 tablespoon Parmesan cheese
  • 1/2 teaspoon oregano, dried

Instructions

  1. Preheat the oven or toaster oven to the broil setting.
  2. Line a baking sheet with foil.
  3. Arrange the tortilla chips in a single layer on the baking sheet.
  4. Drizzle the sauce over the chips making sure to get some sauce on each chip.
  5. Sprinkle the mozzarella cheese evenly over the tomato sauce. Next top the mozzarella cheese with the Parmesan cheese.
  6. Dust all the cheese-covered chips with dried oregano.
  7. Broil about 3 - 5 minutes or until the chips start to brown and the cheese gets bubbly.

Notes

Use baked tortilla chips to decrease the fat.

If you are making these Pizza Nachos in a toaster oven use a toaster oven sized baking sheet. You could also use a pie pan.

Lower the rack in the toaster oven. If you leave it on the middle rack the nachos may get done sooner and burn so keep an eye on them.

You can adjust all of these ingredients to your taste.

Ingredients

  • 1 cup dates, pitted
  • 1 cup almonds
  • 1 cup cherries, dried
  • 1 cup old fashioned oats
  • 1/2 - 1 teaspoon salt, Kosher

Instructions

  1. Add all ingredients in a food processor.
  2. Pulse/mix to combine ingredients until they stick together and form a ball.
  3. Press mixture into an 8 or 9 inch square pan.
  4. Cut into bars. Serve.

Notes

When mixing these ingredients stop and break apart the dates if they clump together.

Store these bars in an airtight container for up to a week in the refrigerator and up to 3 months in the freezer.

Ingredients

  • 2 pita breads, whole wheat
  • 1/2 cup pizza, tomato or pasta sauce (or as desired)
  • 1/2 cup mozzarella cheese, shredded (regular or vegan)
  • Your choice of topping (see below)

Instructions

  1. Preheat regular or toaster oven to 400 degrees.
  2. For regular oven: Cover baking sheet with foil. Place pita breads on the baking sheet, scooped side facing up. For toaster oven: No need for a pan. You will be placing directly on the baking rack.
  3. Spread 1/4 cup of sauce evenly over each pita bread, leaving about 1/2 inch border without sauce.
  4. Sprinkle 1/4 cup of cheese over sauce.
  5. Layer and arrange your choice of toppings over the cheese and sauce.
  6. For regular oven: Bake about 10 minutes or until the pita bread reaches desired crispness and cheese starts to bubble and brown. For toaster oven: Place each pizza one at time on the rack of a toaster oven. Toast until the cheese starts to brown and bubble (about 3 or 4 minutes). Serve while hot!

Notes

Choice of toppings:
Onions, chopped (any color)
Bell peppers, sliced or chopped (any color)
Mushrooms, sliced
Veggie or regular meats (cooked)
Beans, cooked
Pineapple, tidbits
Tomatoes, sliced
Olives, pitted and sliced (black or green)
Zucchini, sliced thin
Herbs, fresh (oregano, basil)
Garlic powder
Parmesan cheese
Crushed red pepper flakes
Cheese, shredded, variety
Many others... use your imagination!

You can use more or less sauce and toppings as desired. Your pizza will be as healthy as the toppings are.

Vegan cheese may not brown and bubble. When using vegan cheese remove the pizza when the crust starts to brown and the toppings are cooked.

Cut these pita pizzas in quarters for delicious appetizers!
