Crockpot Salmon with Asian-Style Vegetables

I used frozen Salmon (thawed) and frozen Asian Style Vegetables so you can keep these ingredients on hand in the freezer and make this recipe anytime! This recipe is impressive enough to make for your important company and it is so easy that you can also make it for an every-day meal. Yield: 4 servings

Crockpot Salmon with Asian-Style Vegetables

Ingredients

  • 10 - 12 ounces salmon fillets
  • 12 - 16 ounces Asian stir fry vegetable blend, frozen
  • 2 tablespoons soy sauce (regular or low sodium)
  • 2 tablespoons honey
  • 1 - 2 tablespoons lemon juice
  • Salt (to taste)
  • Pepper, fresh ground (to taste)
  • Cooking spray

Instructions

  1. Spray crockpot insert with cooking spray.
  2. Cover the bottom of the crockpot with the frozen vegetables.
  3. Place salmon fillets on top of the vegetables.
  4. Salt and pepper the salmon as desired.
  5. Mix together the soy sauce, honey, and lemon juice.
  6. Pour mixture over the salmon and vegetables.
  7. Cook on low for 2 - 2 1/2 hours or until the salmon is cooked and the thickest part flakes easily with a fork.
  8. Break the salmon into desired sized pieces. Serve the vegetables and salmon with brown rice, quinoa or couscous. Add more salt and pepper to taste.

Notes

If desired, top this salmon dish with sesame seeds just before serving.

You can double the soy sauce, honey, lemon to make more of the seasoned mixture. Pour the desired amount of mixture over the salmon and vegetables.

The thicker your salmon pieces, the longer they will take to cook. Smaller pieces will cook faster.

Have you ever thought of cooking frozen vegetables in a toaster oven? I was surprised to find out that cooking frozen vegetables in a toaster oven is an easy, healthy, and delicious way to cook them. When you have a few things cooking at once it can be very helpful to free up the stove and microwave by using the toaster oven to cook the vegetables.

If you have not tried cooking frozen vegetables in your toaster oven I think you will be pleasantly surprised how easy and delicious they will turn out. You can cook any variety of frozen vegetables in the toaster oven. For example, try cooking frozen broccoli, carrots, green beans, mixed vegetables, stir-fry style vegetables and more in the toaster oven. Frozen Vegetables in a Toaster Oven

Ingredients

  • 3 - 4 cups frozen vegetables
  • Cooking spray
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Spray baking pan with cooking spray.
  2. Spread frozen vegetables on the pan in a single layer.
  3. Turn toaster oven to the bake setting. Set temperature to 425 degrees. Put pan in oven and cook vegetables for 12 - 15 minutes or until your desired doneness.
  4. Salt and pepper to taste. Serve.

Notes

You can use a variety of pans to cook the frozen vegetables in the toaster oven. I have used a small baking sheet, pie pan, bread pan, and glass baking dish. If you use a deeper pan still put only a single layer of vegetables.

Green Beans, Boiled

Fresh green beans are so delicious and a great side dish to almost any meal. Boiling Green Beans on the stove is an easy way to cook them.

Are you trying to eat healthier? Trying to eat more vegetables? Fresh Green Beans are so easy to cook. Trim some fresh Green Beans and boil them for dinner tonight!

Yield: 4 - 8 servings

Green Beans, Boiled

Ingredients

  • 1 - 2 pounds green beans
  • Salt to taste

Instructions

  1. Bring a large pot of water to a boil.
  2. Wash the beans, remove the stem ends. You can cut the beans into 1- inch pieces or leave them whole.
  3. Add the beans to the boiling water. Boil them uncovered for about 5 - 8 minutes. Take them out and drain them when they are bright green and as tender as you like (taste one).
  4. Salt to taste and serve.

Notes

Cook the green beans to your desired doneness. They can be crisp-tender and crunchy or soft cooked.

One pound of green beans make about 4 servings.

There are other ways to cook green beans that are not described here such as steaming, simmering and microwaving.

This Super Energy Garden Soup recipe has lots of fresh vegetables and tons of flavor! I think you will feel super healthy and energetic after eating this delicious soup. You could even eat if for breakfast to make sure you have lots of energy for the day!

Super Energy Garden Soup

Ingredients

  • 1 cup onion, diced
  • 1 - 2 teaspoons olive oil
  • 1 tablespoon garlic, minced
  • 5 cups water
  • 5 teaspoons chicken broth/seasoning, powdered
  • 1 cup carrots, diced
  • 1 1/2 cups red potatoes, diced
  • 1 cup celery, diced
  • 3 - 4 cups kale, chopped
  • 2 teaspoons sage, dried
  • 2 - 3 teaspoons thyme, dried
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Heat olive oil in large pot.
  2. Sauté onion and garlic in olive oil in a large pot until the onion is soft (translucent).
  3. Add water and chicken broth powder. Stir.
  4. Add the carrots and celery. Stir and bring to a boil.
  5. When it comes to a boil, reduce the heat to a simmer. Simmer 5 minutes.
  6. Add red potatoes and simmer until the potatoes are soft (about 15 minutes).
  7. Add kale, sage, thyme, salt and pepper. Stir and simmer for 10 more minutes or until desired taste and texture.
  8. Add more powdered chicken broth and seasonings if desired. Serve.

Notes

You can substitute regular liquid chicken broth for the powdered chicken broth/seasoning and water. I use a vegetarian powdered chicken broth/seasoning that does not have MSG.

If you use fresh herbs use three times the amount (for 1 teaspoon dried, use 3 teaspoons fresh).

You can use more or less seasonings and vegetables to taste.

You can also sauté the onion and garlic in a skillet and transfer it to the pot when it is cooked.

You can double this Super Garden Energy Soup recipe if desired.
