Hi Karen – thank you for this lovely recipe (and all your lovely recipes). Question: the 5 – 10 additional minutes the beans cook after adding the salt and lemon juice – is that the same whether we made the beans on high or low? Or should I use 5 minutes if on high and 10 minutes if on low? Or…something else? (I plan to make them on low while I sleep. I love crockpots for this kind of thing 🙂

That is a good question. If you are cooking on low I would cook it for about 10 more minutes. When you cook the beans on low make sure you cook them long enough so they are as tender as you would like. Sometimes it can take a while. Once you make it the first time you will see how long it will take in your crockpot. Let me know how it turns out!

I made the mistake of adding le lemon juice and salt at the same time as the other ingredients before cooking the beans. Is it going to make a difference once the beans are cooked? Are they going to be harder? What is the purpose of waiting to the end of the cooking process before adding those two ingredients?

It should be fine if you add the salt at the beginning of cooking, but be light on the salt. You can add more at the end of cooking if needed. Some say that acid in the lemon juice can prevent the skins on the beans from getting soft if you add it too early. I like to add it at the end of cooking just in case it does affect the bean texture. Also I think the lemon juice has a fresher flavor when it is added at the end of the cooking time. If you lost some of the lemon flavor by adding it early you could always add a little more at the end of the cooking time. If you make this recipe again and add the salt and lemon juice at the end, let me know if you think it made any difference. Happy Cooking!
