Ingredients: 1 - 2 teaspoons olive oil; 1 cup corn (fresh or frozen); 3/4 cup bell pepper, chopped (green or red); 1 1/2 cups onion, diced; 1 - 2 teaspoons garlic, minced; 2 tablespoons tomato paste; 1 - 2 teaspoons chili powder; 1/4 - 1/2 cup water; 1 teaspoon salt; 5 cups brown rice, cooked; 1 teaspoon salt

Easy Spanish Rice

Ingredients

1 - 2 teaspoons olive oil
1 cup corn (fresh or frozen)
3/4 cup bell pepper, chopped (green or red)
1 1/2 cups onion, diced
1 - 2 teaspoons garlic, minced
2 tablespoons tomato paste
1 - 2 teaspoons chili powder
1/4 - 1/2 cup water
1 teaspoon salt
5 cups brown rice, cooked
1 teaspoon salt

Instructions

Heat olive oil over medium heat in a large pan.
Add corn, bell pepper, onion, and garlic. Sauté until the onions are soft.
Add tomato paste, chili powder, and 1/4 cup of water. Stir well.
Mix in cooked rice and salt. Heat the rice mixture.
Add more water if needed to keep rice as soft as desired.
Serve when Spanish rice is hot.

Notes

You can also use canned corn (drained) if you do not have fresh or frozen.

I prefer Kosher salt for the best flavor.

You can adjust the amount of spices and vegetables as desired.
