Mexican Veggie Pizzas

Make this fast, easy, healthy, yummy Mexican Veggie Pizzas recipe in a toaster oven or regular oven! In this video Karen Breyer will show you step-by-step how to make Mexican Veggie Pizzas. This is a perfect recipe for a crowd or for just one or two people. You can make this Mexican Veggie Pizza mixture ahead of time and then make the number of pizzas you want when you are ready.

This Mexican Veggie Pizzas recipe is great for kids who are old enough to use a toaster oven. They can make one or two Mexican Veggie Pizzas in the toaster oven after school or for a meal (then you don’t need to!). If your kids want to learn how to cook, this is an easy, yummy recipe for them to start with.

These Mexican Veggie Pizzas are delicious on their own and they are even yummier when you add your favorite toppings to them. You can top them with tomatoes, salsa, sour cream, guacamole, avocados, chopped lettuce, sliced olives and more! Watch this cooking video and make this delicious Mexican Veggie Pizzas recipe today!

Yield: 6 servings

Mexican Veggie Pizzas

Ingredients

  • 1 1/2 cups yellow corn, frozen
  • 1 can (14 1/2 oz.) diced tomatoes with green chilies
  • 1 can (16 oz.) fat-free refried beans
  • 1/2 - 1 teaspoon garlic powder
  • 1/2 - 1 teaspoon cumin, ground
  • 6 tostada shells
  • 3/4 cup Mexican cheese blend, shredded (regular or vegan)
  • Your choice of toppings.

Instructions

  1. Preheat the oven to 425 degrees. Line a cookie sheet with foil.
  2. Rinse and drain the corn, then set aside.
  3. Pour tomatoes and their juice into a mixing bowl. Break up any large chunks with a fork.
  4. Add corn, refried beans, garlic powder, and ground cumin to the tomatoes. Mix well.
  5. Place tostada shells on a cookie sheet lined with foil.
  6. Spread the mixture to the edges of the shells with the back of a spoon. Use 1/2 cup to 2/3 cup per shell.
  7. Top each shell with 1-2 tablespoons of shredded cheese.
  8. Bake for about 10 minutes or until the cheese just starts to bubble and brown.
  9. Remove from oven and top tostadas with desired toppings.

Notes

Some suggested toppings:
Lettuce, shredded or chopped
Tomatoes, diced or sliced
Green onions, sliced
Black olives, sliced or diced
Salsa
Sour Cream
Avocados, diced or sliced
Guacamole

Everyone loves these. Great for a crowd. You can also just make a couple and save the unused bean mixture in the refrigerator for about a week.You can make one or two at a time in the toaster oven.

You can thaw the corn on the counter for a few minutes or in the refrigerator for a longer time. If there was not any ice on the corn you do not need to rinse it if it is already thawed. You could use rinsed and drained canned corn in place of the frozen corn, but the frozen corn will probably taste much fresher.

Roasted Garlic

If you love garlic, I think you will go crazy for this Roasted Garlic recipe! Roasted Garlic is the ultimate garlic recipe! In this video Karen Breyer and her dad will show you step-by-step how to make Roasted Garlic cloves.

This is a very easy Roasted Garlic recipe that you can make in your oven or toaster oven. Roasted Garlic spread on toast tastes like gourmet garlic toast without the butter. Garlic is very healthy alone and roasting it will give you more delicious opportunities to add extra garlic to your diet. Add roasted garlic to soups, stews, hummus, pizza, and more! Roasted garlic cloves also taste very tasty alone.

Try this Roasted Garlic spread on a whole grain bread or toast for a perfect start to a healthy meal. This garlic toast is wonderful with soups, salads, stews, pasta or almost any meal. Watch this cooking video and try this easy, healthy, delicious Roasted Garlic recipe today!

Yield: 4 servings

Roasted Garlic

Ingredients

  • 2 garlic bulbs
  • 2 - 4 teaspoons olive oil
  • Salt, Kosher (to taste)
  • Pepper, fresh ground (to taste)
  • Sliced bread or toast (if desired)

Instructions

  1. Preheat your oven or toaster oven to 350 degrees.
  2. Cut 1/4 to 1/2 inch slice from the top of the garlic bulbs. Cut off enough so the cloves are exposed.
  3. Carefully peel off the outer paper-like skin from the garlic bulbs. Leave enough to hold the garlic cloves together.
  4. Place the bulbs cut side up on a 12 inch piece of aluminum foil.
  5. Drizzle 1 - 2 teaspoons of olive oil over each bulb. Sprinkle with salt and pepper.
  6. Wrap each bulb in the foil. Place in a shallow baking dish or pie pan.
  7. Bake about 45 minutes or until the garlic is tender when pierced with a fork or toothpick.
  8. Squeeze the soft garlic out of the cloves. Spread the garlic on bread or toast. Sprinkle with more salt and pepper if desired.

Notes

Wait until the garlic bulbs are cool enough to touch before squeezing out the soft garlic.

Try spreading the garlic on some bread and then sprinkling some toasted almonds over the garlic. It is delicious!

Adjust this recipe to make as many Roasted Garlic servings as you desire. Use one garlic bulb for every 2 servings.

Cherry Almond Energy Bars

Ingredients

  • 1 cup dates, pitted
  • 1 cup almonds
  • 1 cup cherries, dried
  • 1 cup old fashioned oats
  • 1/2 - 1 teaspoon salt, Kosher

Instructions

  1. Add all ingredients in a food processor.
  2. Pulse/mix to combine ingredients until they stick together and form a ball.
  3. Press mixture into an 8 or 9 inch square pan.
  4. Cut into bars. Serve.

Notes

When mixing these ingredients stop and break apart the dates if they clump together.

Store these bars in an airtight container for up to a week in the refrigerator and up to 3 months in the freezer.

Crockpot Corn on the Cob

Cook Corn on the Cob in your Crockpot! In this cooking video Karen Breyer and her dad will show you step-by-step how to make Crockpot Corn on the Cob! Cooking corn on the cob in your crockpot or slow cooker is so easy and the corn turns out perfect every time! I think this is the best way to cook corn on the cob.

No more waiting forever for a pot of water to boil and supervising the corn while it is cooking. When you cook the corn on the cob in your crockpot you can do other things while it is cooking. You can even leave the house! I think once you try cooking corn on the cob in a crockpot or slow cooker you will never go back to the big pot of water method. Yield: 2 - 10 ears of corn

Crockpot Corn on the Cob

Ingredients

  • 2 - 10 ears corn, husked
  • 1/3 - 1/2 cup water

Instructions

  1. Place the desired number (2 - 10) of ears of corn in a Crockpot. Break the corn in half if needed to fit them in.
  2. For 2 - 4 ears add 1/3 cup of water. For 5 - 10 ears add 1/2 cup of water.
  3. Cook on high for 1 3/4 hours to 2 1/2 hours or until the corn is tender crisp.

Notes

For 4 ears of corn or less decrease the cooking time by 15 minutes.

If the corn has been refrigerated and is cold, increase the cooking time by 15 minutes.
