Stovetop Popcorn

In this video Karen Breyer and her dad will show you how to make delicious, healthy Stovetop Popcorn at home. It is so easy and fun to make! Yield: 4 servings

Stovetop Popcorn

Ingredients

  • 3 tablespoons vegetable oil
  • 1/2 cup popcorn kernels, un-popped
  • Salt (to taste)

Instructions

  1. Pour the popcorn and oil into a 3 - 4 quart pot with a tight fitting lid. Tilt the pan to spread around the popcorn and oil evenly.
  2. Cover the pot and cook over medium-high heat until 1 kernel pops. Then remove the pot from the heat.
  3. Wait 1 minute and return the pot to the heat.
  4. Shake the pot occasionally until the popping slows to 2 - 3 seconds between pops.
  5. Pour the popcorn into a large bowl and add remove un-popped kernels.
  6. Sprinkle with salt, stir until evenly coated.

Notes

You can add other toppings and seasonings to the popped corn as desired.

1/2 cup of popcorn kernels makes about 4 quarts of popped corn.

Yield: 4 servings

Frozen Peanut Butter Banana Logs

Ingredients

  • 4 bananas
  • 1 cup orange juice
  • 1 cup peanut butter
  • 2 cups of your choice of toppings: Chopped nuts, coconut, chocolate chips, carob chips, crushed cereal, crushed cookies, sprinkles and granola

Instructions

  1. Line baking sheet with wax paper.
  2. Cut the bananas in 2 inch pieces.
  3. Put orange juice in a bowl. Dip the bananas in the orange juice and place them on the baking sheet.
  4. Place the dipped bananas in the freezer for about 3 hours or until frozen.
  5. Roll the frozen bananas in the peanut butter.
  6. Next roll the bananas in the toppings of your choice.
  7. Return the bananas to the freezer until they are ready to serve. Enjoy!

Notes

You can double or half this recipe.

This recipe is as healthy as the toppings are.

Green Beans, Boiled

In this cooking video Karen Breyer will show you step-by-step how to cook Green Beans on the stove in boiling water. Try this easy, healthy Boiled Green Bean recipe. Fresh green beans are so delicious and a great side dish to almost any meal. Boiling Green Beans on the stove is an easy way to cook them.

Are you trying to eat healthier? Trying to eat more vegetables? Fresh Green Beans are so easy to cook. Trim some fresh Green Beans and boil them for dinner tonight!

Yield: 4 - 8 servings

Green Beans, Boiled

Ingredients

  • 1 - 2 pounds green beans
  • Salt to taste

Instructions

  1. Bring a large pot of water to a boil.
  2. Wash the beans, remove the stem ends. You can cut the beans into 1- inch pieces or leave them whole.
  3. Add the beans to the boiling water. Boil them uncovered for about 5 - 8 minutes. Take them out and drain them when they are bright green and as tender as you like (taste one).
  4. Salt to taste and serve.

Notes

Cook the green beans to your desired doneness. They can be crisp-tender and crunchy or soft cooked.

One pound of green beans make about 4 servings.

There are other ways to cook green beans that are not described here such as steaming, simmering and microwaving.

This Super Energy Garden Soup recipe has lots of fresh vegetables and tons of flavor! I think you will feel super healthy and energetic after eating this delicious soup. Serve this soup as a healthy appetizer, side dish or main dish for lunch or dinner. It is great served with bread or crackers, a sandwich and a salad. You could even eat if for breakfast to make sure you have lots of energy for the day!

Grow these vegetables and herbs in your garden and you won’t even need to go to the store before you make this delicious vegetable soup! Super Energy Garden Soup

Ingredients

  • 1 cup onion, diced
  • 1 - 2 teaspoons olive oil
  • 1 tablespoon garlic, minced
  • 5 cups water
  • 5 teaspoons chicken broth/seasoning, powdered
  • 1 cup carrots, diced
  • 1 1/2 cups red potatoes, diced
  • 1 cup celery, diced
  • 3 - 4 cups kale, chopped
  • 2 teaspoons sage, dried
  • 2 - 3 teaspoons thyme, dried
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Heat olive oil in large pot.
  2. Sauté onion and garlic in olive oil in a large pot until the onion is soft (translucent).
  3. Add water and chicken broth powder. Stir.
  4. Add the carrots and celery. Stir and bring to a boil.
  5. When it comes to a boil, reduce the heat to a simmer. Simmer 5 minutes.
  6. Add red potatoes and simmer until the potatoes are soft (about 15 minutes).
  7. Add kale, sage, thyme, salt and pepper. Stir and simmer for 10 more minutes or until desired taste and texture.
  8. Add more powdered chicken broth and seasonings if desired. Serve.

Notes

You can substitute regular liquid chicken broth for the powdered chicken broth/seasoning and water. I use a vegetarian powdered chicken broth/seasoning that does not have MSG.

If you use fresh herbs use three times the amount (for 1 teaspoon dried, use 3 teaspoons fresh).

You can use more or less seasonings and vegetables to taste.

You can also sauté the onion and garlic in a skillet and transfer it to the pot when it is cooked.

You can double this Super Garden Energy Soup recipe if desired.
