Testing Yeast Activity

Ingredients

  • 1 teaspoon sugar
  • 1/2 cup water, warm (not hot)
  • 1 packet (2 1/4 teaspoons) yeast, dry

Instructions

    1: Add the sugar and warm water to a 1-cup liquid measuring cup. Stir until the sugar is dissolved.
    2: Sprinkle in 1 packet of yeast. (Stir it if you want to, but you don’t need to)
    3: In a few minutes the yeast will be activated and start to foam.
    4: After 10 minutes the foamy yeast should have a rounded top and reach the top of the cup or higher.
    5: If the yeast reaches the 1 cup mark it is active. If it did not, discard it.
    6: Use the activated yeast right away in a recipe. Make sure to deduct 1/2 cup of liquid from the recipe.

Notes

The warm water should be between 110 - 115 degrees.
One packet of yeast = .25 ounce = 7 g = 2 1/4 teaspoons.

Graham Cracker Pie Crust

Ingredients

  • 1 1/2 cup graham cracker crumbs
  • 1/4 cup butter, melted (regular or vegan)
  • 2 tablespoons maple syrup

Instructions

    1: Preheat the oven to 350 degrees. Add all the ingredients in a medium bowl.
    2: Stir until the ingredients are evenly combined.
    3: Press the moistened crumbs firmly in a 9 inch pie pan. You can compact the crumbs more by using the bottom of a small glass.
    4: Bake 8 - 10 minutes.
    5: Cool. The crust is now ready for your no-bake pie filling.

Notes

When I make a pie crust I like to press it in the sides first, and then move to the center.
You can use this pie filling without baking it. Just chill it for an hour so before filing it with a no-bake pie filling.
You can add a bit more maple syrup or melted butter if you want it moister.

Ingredients

  • 10 full sheets graham crackers

Instructions

    1: Method 1: Put graham crackers in a thick gallon resealable bag. Use a rolling pin or the bottom of a thick glass or mug to crush the graham crackers.
    2: Method 2: Place the graham crackers in a food processor. Process until they are in small crumbs.

Notes

Use the graham cracker crumbs to make a graham cracker pie crust or for use in other recipes.

Vegan Mayonnaise

Ingredients

  • 1 12 ounce box tofu, firm (self-stable type)
  • 1 cup cashews, raw
  • 1/4 cup lemon juice
  • 1 - 2 tablespoons honey
  • 1 teaspoon onion powder
  • 2 teaspoons Kosher salt (or to taste)

Instructions

    1: Add ingredients to a blender or food processor.
    2: Blend until very smooth.
    3: Chill well before using. The mayonnaise will thicken as it chills

Notes

I use a shelf stable tofu that does not need refrigerated before opening. If you use a refrigerated tofu, drain out the extra liquid.
You can use soft tofu if you desire a softer mayonnaise consistency.
Adjust seasonings to your taste.
