Rice Cooker Italian Polenta
Ingredients
- 1 cup cornmeal
- 1/4 cup Parmesan, grated
- 2 tablespoons chives, dried
- 2 teaspoon Italian seasoning
- 1/2 teaspoon (or to taste Kosher salt
- 1/8 teaspoon pepper, ground (to taste)
- 3 cups water
- 1 teaspoon olive oil
Instructions
1. Add the cornmeal, Parmesan, chives, Italian seasoning, salt and pepper to a rice cooker. Stir together.
2: Mix in the water and olive oil.
3: Set the cooking cycle on white rice.
4: After the cycle is complete wait 10 minutes before opening the rice cooker. This will allow the polenta to absorb all the water.
5: Stir and serve. If desired add salt and pepper to taste.
Notes
You can use 1/3 cup of fresh, chopped chives in place of dried chives.
You can double or triple this recipe if desired.
Reheat leftovers in a medium pan over medium low heat. Add a bit of water and stir until creamy and heated through.

Tasty & easy, but my old rice cooker, with just on/off switch stopped cooking early in the process. So, I had to pour ingredients into pot & finished cooking on the stove That didn’t seem to hamper the polenta from completion of cooking. ‘Twas a good side dish! Thanx, Robbie

I am glad it turned out! Next time you could try turning the rice cooker on again for a few more minutes. I am guessing it would finish cooking in the rice cooker and you wouldn’t need to get another pan dirty.

Really Easy! I modified for a Whole Foods, Plant-based Diet: dropped oil, 1:1 replaced Parmesan for nutritional yeast. Really tasty, don’t miss the Parmesan. I saw the comment on not enough cooking time with a rice
cooker. I pushed it once, let it click, left it 10 minutes and then stirred. Pushed it again, let it set 10, stirred and served. I’ll probably half the Italian seasoning next time.

Yes the InstaPot has a rice setting and you can use that.

How long does it take to cook in a rice cooker? Can I use half the amount?

The length of time depends on what type of rice or grain you are using. Brown rice takes longer than white rice. A larger batch of rice or grain will take longer to cook than a smaller one. You can use half the amount. Just adjust the rest of the ingredient as well.

Not trying this again. I just ended up with a pile of mush and way too much water that never did anything. I tried again doubling the amount of polenta and the same thing happened.
This is what I get for trying something new. Not doing that again.
