Rice Cooker Curried Quinoa

This Rice Cooker Curried Quinoa recipe is a tasty side dish perfect for almost any meal. I think it goes especially well with most Indian recipes. If you haven’t cooked anything but rice in your rice cooker, this is a perfect recipe to try. Making recipes in the rice cooker is an easy way to cook healthy food with minimal effort. Yield: 8 servings

Rice Cooker Curried Quinoa

Ingredients

  • 2 cups quinoa
  • 4 1/4 cups water
  • 3/4 cup green pepper, chopped small
  • 1/2 - 1 teaspoon garlic powder
  • 1/2 - 1 teaspoon curry powder
  • 2 tablespoons onions, dried (minced or chopped)
  • 1/2 - 1 teaspoon salt
  • 3/4 cup raisins

Instructions

  1. : Stir all ingredients together in a rice cooker.
  2. : Cook on the white rice setting.
  3. : When finished, fluff the cooked quinoa and evenly distribute the raisins.
  4. : Let the Curried Quinoa set 10 more minutes.
  5. : Salt to taste and serve.

Notes

Adjust the seasonings to your taste.

You can use 3/4 cup of fresh minced onion in place of the dried.

You can substitute 1 - 2 minced garlic cloves for the garlic powder.

Read your quinoa label and rinse the quinoa if it calls for it. Most packaged quinoa is pre-rinsed and does not need it.

This Curried Quinoa is delicious topped with chopped toasted or raw walnuts.

Curried Rice Pilaf

Curried Rice Pilaf

Ingredients

  • 1 1/2 cups onions, diced
  • 1 - 2 teaspoons olive oil
  • 1 cup red pepper, diced
  • 1/2 cup carrots, shredded
  • 1/4 cup (more if needed) water
  • 4 cups brown rice, cooked
  • 1 1/2 cup peas, frozen
  • 2 - 3 teaspoons (to taste) curry powder
  • 1/2 teaspoon (or to taste) Kosher salt

Instructions

  1. Heat olive oil in a medium or large pot over medium heat.
  2. Add the onions, pepper and carrots and sauté until the onions are soft.
  3. Stir in 1/4 cup water, cooked rice, frozen peas and curry powder. Add more water if desired to make the rice softer and moister.
  4. Continue to cook over medium low heat until the curry is hot.
  5. Add salt, stir and serve.

Notes

This recipe is great to use leftover rice (of course fresh rice is best). If your rice is leftover and hard, add more water if needed to make sure the rice is soft and moist enough.

Add a little more water if the rice sticks to the bottom of the pan.

You can also use cooked white rice for this recipe.

Curried Lentils

If you are looking for new dinner ideas, you will love this really good curry dinner recipe. This Curried Lentils recipe is also very delicious for lunch. It is a very healthy recipe with vegetables and without heavy sauces. Both both kids and adults will love these curried lentils.

Yield: 4 servings

Curried Lentils

Ingredients

  • 1 cup orange lentils, rinsed and drained
  • 1 teaspoon olive oil
  • 1 1/2 cup onion, chopped
  • 2 - 3 teaspoons garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 4 cups water
  • 4 teaspoons (or to taste) vegetable broth/seasoning dried
  • 2 cups kale, finely chopped
  • 2 teaspoons curry powder
  • 1 - 15 ounce can tomatoes, diced (including juice)
  • 2 - 3 tablespoons (to taste) cilantro, chopped
  • Kosher salt to taste
  • Pepper, fresh ground to taste

Instructions

  1. Check lentils and remove any debris. Rinse and drain in strainer.
  2. In a medium pot, heat 1 teaspoon of olive oil over medium heat.
  3. Add onion, garlic, celery and carrots to the heated oil and sauté vegetables until the onions are soft.
  4. Stir in the curry powder.
  5. Add lentils, water, vegetable seasoning and tomatoes. Stir together and bring to a boil.
  6. Reduce the heat to medium low and simmer until the lentils are tender (about 5 –7 minutes).
  7. Add kale and simmer 5 more minutes or until the kale is as soft as you would like it.
  8. Add salt and pepper to taste. Serve.

Notes

Dice the carrots and celery in about 1/4 inch pieces.
