Garbanzo Bean Soup with Tomatoes and Spinach

Garbanzo Bean Soup with Tomatoes and Spinach

Ingredients

  • 2 - 3 teaspoons olive oil
  • 2 cups onion, chopped
  • 2 - 3 teaspoons garlic, minced
  • 6 cups water
  • 6 teaspoons chicken broth seasoning, instant (regular or vegan)
  • 2 15 ounce cans garbanzo beans, rinsed and drained
  • 14.5 ounce can tomatoes, diced
  • 10 ounce package spinach, chopped (frozen and thawed)
  • 1/2 - 1 teaspoon Kosher salt (or to taste)
  • 1/4 - 1/2 teaspoon pepper, ground (or to taste)
  • 1/4 cup Parmesan cheese, grated (or to taste)

Instructions

    1: Heat oil in a large saucepan.
    2: Add onions and garlic. Cook until onions are soft. Stir frequently.
    3: Add water, chicken broth seasoning, beans and tomatoes. Stir together.
    4: Bring to a boil. Reduce heat and simmer 15 minutes.
    5: Stir in the spinach, salt and pepper. Heat through.
    6: Spoon into bowls. Top with Parmesan cheese.

Notes

You can use 6 cups of chicken broth in place of the water and instant chicken broth seasoning. You can also adjust the instant chicken broth/seasoning to taste.
Use 2 cups fresh baby spinach in place of the frozen spinach.
You can easily double this recipe.
Don’t cook the spinach longer than needed to heat through or it will turn a dark color.
Use petite diced tomatoes for a more uniform size of ingredients if desired (it looks nice).

Pineapple Orange Sauce

Ingredients

  • 2 cups or 1 - 20 ounce can crushed pineapple, unsweetened
  • 1/2 cup orange juice concentrate
  • 1/4 cup honey
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • 1/4 teaspoon lemon extract

Instructions

  1. Stir together the pineapple, orange juice concentrate, and honey in a saucepan. Continue to stir as the mixture comes to a boil.
  2. While waiting for the boil get the cornstarch mixture ready; In a measuring cup, dissolve the cornstarch in the water.
  3. Slowly stir the dissolved cornstarch mixture into the fruit filling. Do not stop stirring.
  4. Stir in the lemon extract.
  5. Continue to stir until the filling is thick. Remove from the heat and allow it to cool.
  6. Chill the filling in the refrigerator. The filling will continue to thicken in the refrigerator. When the filling is thick and chilled it is ready to spread on French toast, pancakes, toast, or as a filling for sandwiches or my Orange Cake recipe.

Notes

Make sure to keep stirring the filling mixture as long as it is on the heat or it will get lumpy and stick on the bottom of the pan.

Healthy Banana Bread

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup flour, unbleached
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1/2 cup walnuts, chopped
  • 1/2 - 3/4 cup bananas, ripe (mashed)
  • 1/2 cup coconut milk
  • 1/3 cup honey
  • Water (as needed)
  • Cooking spray

Instructions

  1. Preheat oven to 350 degrees. Spray loaf pan with cooking spray.
  2. Mix dry ingredients together. Mix in walnuts.
  3. Mix mashed bananas, coconut milk, and honey together.
  4. Add enough water to make 1 1/2 cup total liquid and mix together.
  5. Briskly stir the liquid mixture into the dry ingredients.
  6. Pour mixture into pan and bake 40 to 45 minutes or until the bread is golden brown and a knife inserted in the center comes out clean.

Notes

I like Kosher salt the best.

I prefer aluminum-free baking powder.

Yield: 8 - 12 cookies

Two Ingredient Oatmeal Banana Cookies

Ingredients

  • 1 cup ripe bananas, mashed
  • 1 cup Old Fashioned Rolled Oats
  • Cooking spray

Instructions

  1. Preheat oven to 350 degrees. Spray baking sheet with cooking spray.
  2. Mash bananas with a fork or the back of a spoon.
  3. Mix together the bananas and oats.
  4. Drop by tablespoonfuls on the cookie sheet.
  5. Bake for about 12 to 15 minutes or until cookies become a golden brown color.
  6. Remove cookies from the pan. Cool and serve.

Notes

You can add optional ingredients to the oat-banana mixture such as a dash of salt, vanilla, raisins, dried fruit, nuts, chocolate chips, dried cranberries, and coconut.

Cookies are best eaten the same day. You can store the cookies in an airtight container for a few days.

You can flatten the cookies with a fork to make them the shape you would like.

You can make the cookies bigger or smaller. Smaller cookies will cook faster so keep an eye on them so they don’t burn.
