Sweet Potato Toast

Try this delicious, healthy Sweet Potato Toast! It is so easy to make in your toaster or toaster oven! All you need is sweet potatoes! In this video Karen Breyer will show you step-by-step how to make this Sweet Potato Toast recipe.

This is the easiest recipe you may ever make! Top your Sweet Potato Toast with different spreads and toppings. It is a perfect recipe for when you are in a hurry or do not want to make a complicated recipe. You can serve this Sweet Potato Toast for breakfast, lunch, or dinner. It is also perfect for an easy snack or appetizer.

Yield: 1 serving

Sweet Potato Toast

Ingredients

  • 1 medium to large sweet potato
  • Your choice of toppings (see below)

Instructions

  1. Wash and dry a sweet potato.
  2. Slice the sweet potato lengthwise into slices about 1/4 inch thick. For smaller slices cut the potato in half before making lengthwise slices.
  3. Place the potato slices on the toaster oven rack or in the toaster (make sure they are long enough to get out!).
  4. Press toaster as many times it takes to make your sweet potato slices browned as much as you like. Some slices may toast faster than others so just take them out early if they do.
  5. When your sweet potato slices are toasted, spread them with the toppings of your choice and enjoy!

Notes

Some delicious toppings for this Sweet Potato Toast include butter, almond or peanut butter with fruit, hummus, tofu sour cream and chives, eggs, maple syrup, avocados, cream cheese and strawberries, chili, lentils, bruschetta and Parmesan, plus so many more possibilities!

Some of the browned spots may turn almost black and that is fine in my opinion.

You can toast the skin ends of the sweet potatoes too but they may take longer or shorter to cook.

Serve this Sweet Potato Toast for breakfast, lunch, dinner and even as an appetizer or snack!

Crockpot Maple Almond Sweet Potatoes

Yield: 8 servings

Crockpot Maple Almond Sweet Potatoes

Ingredients

  • 8 cups sweet potatoes (or yams)
  • 1/3 cup water
  • 1/2 cup crushed pineapple with the juice (canned, unsweetened)
  • 3 - 4 tablespoons maple syrup
  • 1 teaspoon salt (or to taste)
  • 1/3 cup almonds, toasted (chopped or sliced)
  • 2 teaspoons vanilla

Instructions

  1. Cut cleaned sweet potatoes into 1 inch cubes.
  2. Add the sweet potatoes, water, pineapple, maple syrup and salt to the crockpot and stir together.
  3. Cook the potato mixture for 4 - 5 hours on low or 2 - 3 hours on high until the sweet potatoes are soft.
  4. Mash the sweet potato mixture with a potato masher.
  5. Mix in the almonds and vanilla. Serve.

Notes

It is fine to use raw almonds instead of toasted.

I like to sprinkle some additional almonds on top of the finished Maple Almond Sweet Potatoes.

I prefer Kosher salt but you can use any type of salt.

Feel free to peel the sweet potatoes. I prefer to leave the skins on.

For a variation add 1/2 cup dried cranberries to the potato mixture before cooking.

You can cut this recipe in half and cut the cooking time by 15 to 30 minutes.
