Scrambled Tofu

Yield: 3 - 4 servings

Scrambled Tofu

Ingredients

  • 1 14 -16 ounce package tofu, firm or extra firm (water-packed)
  • 1 1/2 - 2 teaspoons chicken seasoning/broth, vegan
  • 1 1/2 tablespoons nutritional or brewer’s yeast flakes
  • 1/2 - 1 teaspoon olive oil
  • 1 1/2 teaspoons onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon turmeric (for color)
  • Kosher salt (to taste)
  • Pepper, fresh ground (to taste)

Instructions

  1. Drain and pat the tofu dry.
  2. Place the tofu in a bowl and mash it into small pieces.
  3. Mix in the rest of the ingredients.
  4. Heat the oil in a skillet over medium-high heat.
  5. When the oil is hot, add the tofu mixture.
  6. Cook it about 10 -15 minutes until desired doneness and texture. Stir frequently.
  7. Serve. Add more salt and pepper to taste if desired.

Notes

Adjust seasonings to your taste.

Mash the tofu with a fork or potato masher.

The longer you cook the tofu, the more chewy it will be.

It is delicious served with ketchup, salsa or vegan cheese sauce.

Try it on avocado toast!

Baked Tofu Fries

Yield: 6 - 8 servings

Baked Tofu Fries

Ingredients

  • 2 blocks tofu, firm
  • Olive oil
  • Salt, to taste
  • Pepper, to taste
  • Cooking spray

Instructions

  1. Preheat oven to 375 degrees.
  2. Spray baking sheet with cooking spray.
  3. Drain liquid off tofu. Press tofu with paper towels to remove as much moisture as you can.
  4. Slice tofu into 1/3 - 1/2 inch sticks (like French fries).
  5. Lay tofu sticks on baking sheet. Brush tofu sticks with olive oil or spray with cooking spray.
  6. Sprinkle tofu sticks with salt and pepper.
  7. Bake about 25 minutes or until fries are crispy and golden.
  8. Serve while hot and crispy.

Notes

These tofu fries are delicious dipped in ketchup.

Before baking sprinkle tofu sticks with onion or garlic powder for a delicious flavor.

Tofu Sour Cream and Chives

Yield: 2 cups

Tofu Sour Cream and Chives

Ingredients

  • 1 12-oz. box tofu (soft, regular or firm)
  • 1/2 cup cashews, raw
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons onion powder
  • 1 teaspoon salt
  • 2 - 3 tablespoons chives, dried

Instructions

  1. Place all ingredient in a blender except the chives.
  2. Blend for 1-2 minutes until smooth.
  3. Add the chives and blend on low just until they are mixed through, but not blended.
  4. Chill in the refrigerator before serving.

Notes

If you use firm tofu you may want to add some water (1/4 –1/2 cup) to thin the sour cream to the desired consistency.

Remember that the sour cream will continue to thicken as it chills in the refrigerator.

If you use refrigerated tofu packed in water, drain the tofu before adding it.

Adjust the chives to taste. You can also use fresh ones.

Do not over-blend the chives. If you blend them too much, the sour cream will turn green. You can also pour the sour cream into a container and then mix in the chives in with a spoon.

Great as a topping for potatoes, yams, beans, and Mexican food. Great as a dip for chips and vegetables. Excellent as a spread on sandwiches. I use it instead of mayonnaise.

This will last about a week in the refrigerator.
