Garlic Herb Roasted Tomatoes

Yield: 4 servings

Garlic Herb Roasted Tomatoes

Ingredients

  • 4 cups cherry or grape tomatoes
  • 1 teaspoon olive oil
  • 1 teaspoon garlic powder
  • 3/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried rosemary
  • 1/8 teaspoon dried thyme
  • 1/2 - 1 teaspoon sugar
  • 3/4 teaspoon salt
  • 1/4 – 1/2 teaspoon fresh ground pepper
  • Cooking spray

Instructions

  1. Preheat oven to 400 degrees. Spray a baking sheet or shallow roasting pan with cooking spray.
  2. Rinse and dry the tomatoes.
  3. In a large bowl, mix together the tomatoes and oil.
  4. Add the garlic, basil, oregano, rosemary, thyme, sugar, salt and pepper. Stir well to coat the tomatoes.
  5. Spread the tomatoes in a baking sheet.
  6. Roast the tomatoes about 10 to 15 minutes or until they just begin to soften and crack.
  7. Serve.

Notes

These Garlic Herb Roasted Tomatoes are delicious as a side dish.

Top them with grated Parmesan cheese if desired.

For a tasty main dish, cook and drain 8 ounces of pasta, stir in these roasted tomatoes and top with Parmesan cheese.

If you like popcorn and Italian food, you will love this tasty Italian Style Popcorn! It is an easy, healthy popcorn snack recipe that is healthier and tastier than regular popcorn. In this cooking video Karen Breyer will show you step-by-step how to make Italian Style Popcorn. Make some tasty Italian Style Popcorn today!

Yield: 10 cups

Italian Style Popcorn

Ingredients

  • 10 cup popped corn, freshly popped
  • 1/4 cup butter
  • 1/2 teaspoon Italian seasoning, dried
  • 1/2 teaspoon garlic powder
  • 1/3 cup Parmesan cheese, grated
  • Salt (to taste)

Instructions

  1. Add butter, Italian seasoning and garlic powder to a small saucepan. Stir together and melt the butter over low heat.
  2. Stir the melted butter mixture into the popped corn
  3. so it evenly coats the popcorn.
  4. Stir in the cheese and salt. Serve.

Notes

It helps to add the butter mixture a little at a time and stir it in well so it gets evenly distributed.

Baked Barbecued Chicken Wings

Ingredients

  • 6 - 8 chicken wings
  • Barbecue sauce
  • 2 tablespoons molasses

Instructions

  1. Preheat the oven to 350 degrees.
  2. Place the chicken wings in baking dish.
  3. Brush the chicken wings with barbecue sauce.
  4. Drizzle the chicken with molasses.
  5. Bake at 350 degrees for about 35 to 45 minutes or until the chicken wings are cooked thoroughly.
  6. Baste the chicken wings with the cooking juices a few times during cooking.
  7. Serve.

Notes

You can adjust the recipe to make more or less Baked Barbecued Chicken Wings.

Orange-Apricot Balls

Ingredients

  • 10 oz. dried apricots
  • 2/3 cup whole almonds, toasted
  • 2 tablespoons powdered sugar
  • 2 tablespoons orange zest (from 2 oranges)
  • 2 tablespoons orange juice
  • 1/2 teaspoon salt
  • 1/3 to 1/2 cup chocolate chips or chunks (semi-sweet, or dark)

Instructions

  1. Wash and dry oranges. Zest oranges, set aside.
  2. Separately chop apricots and almonds in a food processor or strong blender.
  3. In a large bowl, mix together the chopped apricots and almonds.
  4. Stir in sugar, orange zest, salt, and orange juice.
  5. Roll mixture into 1 inch balls and place on a cookie sheet.
  6. Microwave chocolate in a glass container on high until melted. Start with one minute and stir. If needed, microwave a little longer (30 second increments) and stir again. Repeat until chocolate is melted.
  7. Spread the chocolate on top of the apricot-orange balls. Set them aside until the chocolate hardens.
  8. After the chocolate is dry serve!

Notes

Place leftover candies in an airtight container.

Store them in the refrigerator for up to a week.
